Mini Banana Pancakes
Ingredients
Wet:
- 1 Whole Brown Egg (Vital Farms)
- 80 g Nonfat Greek Yogurt (Siggi’s)
- 30 ml Sugar Free Syrup (Mrs. Buttersworth)
Dry:
- 20 g All Purpose Flour (King Arthur)
- 14 g Unflavored Protein Powder (Quest Baking)
- 1 tsp Baking Powder
- 115g Banana (sliced)
Toppings:
- 4-5 Strawberries (cubed)
- ⅓ cup Blueberries
- 15 g Sugar Free Syrup
- 15 g Fat Free Whipped Cream (Reddi)
- 1 tsp Powdered Sugar
Instructions
- In a small bowl, add in your wet ingredients and mix until smooth.1 Whole Brown Egg, 80 g (0.333 cups) Nonfat Greek Yogurt, 30 ml (2 tbsp) Sugar Free Syrup
- Then add in the dry ingredients (besides the banana) and ensure there are no lumps.20 g (2.5 tbsp) All Purpose Flour, 14 g (2 tbsp) Unflavored Protein Powder, 1 tsp Baking Powder
- Add in a few banana slices at a time and evenly coat in the batter.(.75 cup) 115g Banana
- Spray a large pan with coconut oil spray and add your slices on medium heat.
- Cook each mini pancake until golden brown on each side.
- Add them all to a bowl and top with some fresh fruit like strawberries and blueberries.4-5 (0.33 cups) Strawberries, 1/3 cup Blueberries
