Ingredients

  • 112 g Protein Pasta (Barilla)
  • 180 g Frozen Sweet Corn (H-E-B)
  • Olive Oil Spray
  • 90 g Meatless Chickโ€™n Strips (Gardein)

Corn Sauce:

  • 110 g Low Fat Cottage Cheese (Good Culture)
  • ยฝ of the Grilled Corn
  • ยฝ Jalapeรฑo
  • 3-4 tsp Garlic
  • 2-4 tbsp Pasta Reserve Water
  • ยฝ Lime (juiced)

Pasta:

  • 35 g Fresh Spinach
  • 6-8 Cherry Tomatoes (halved)
  • Remaining Grilled Corn
  • Boiled Pasta
  • Pasta Sauce
  • 28 g Fat Free Mozzarella (H-E-B)
  • 20 g Calabrian Chili Peppers (Tutto Calabrian)

Instructions

Boil Pasta:

  • Boil your pasta according to package instructions. Save some pasta water. Strain and rinse the pasta and set aside.
    112 g (1 cups) Protein Pasta

Grilled Corn:

  • Meanwhile, add your corn to a baking sheet and spray with olive oil. Air fry or bake at 375ยฐ for 8-10 mins until some start to char but not burn.
    180 g (1 cups) Frozen Sweet Corn, Olive Oil Spray

Meatless Chicken:

  • In a pan, add more olive oil spray and cook your frozen meatless chicken strips according to package instructions.
    90 g (3 oz) Meatless Chickโ€™n Strips

Pasta Sauce:

  • Add your ingredients to a blender and blend until smooth.
    110 g (.5 cups) Low Fat Cottage Cheese, 1/2 of the Grilled Corn, 1/2 Jalapeรฑo, 3-4 tsp Garlic, 1/2 Lime
  • Add more or less pasta water to get desired consistency. You donโ€™t want it runny but not too thick either so start off small and add more as you go.
    2-4 tbsp Pasta Reserve Water
  • In a large pan, add in 1/4 cup of water and sautรฉ your spinach until wilted on low to medium heat.
    35 g (1 cups) Fresh Spinach
  • Then add in the cherry tomatoes, the rest of your corn, and your boiled pasta. Give it all a good mix.
    6-8 (0.75 cups) Cherry Tomatoes, Remaining Grilled Corn, Boiled Pasta
  • Turn heat to low and add in your pasta sauce. Toss it well before adding in the cheese and Calabrian peppers.
    Pasta Sauce, 28 g (0.25 cups) Fat Free Mozzarella, 20 g (1.5 tbsp) Calabrian Chili Peppers
  • Serve into two portions with your cooked meatless chicken. Sprinkled with crushed red pepper and dig in!
