Ingredients
French Toast Base:
- 120 ml Low Fat Buttermilk (Sprouts)
- 120 ml Protein Plant Milk (Good Karma)
- 2 Whole Large Eggs (Vital Farms)
- 15 g Vanilla Protein Powder (Optimum Nutrition)
- 1 small Lemon (juiced)
- 15 ml Sugar Free Syrup (Mrs Butterworths)
- 1 tsp Vanilla Extract
- ½ tsp Cinnamon
- Pinch of Salt
- 8 slices of Protein Bread (cubed, H-E-B)
- 1 cup Blueberries
Lemon Pudding Custard:
- 120 ml Low Fat Buttermilk
- 7 g Unsalted Butter (Vital Farms)
- 7 g Vanilla Protein Powder
- 6 g Sugar Free Lemon Instant Pudding Mix (Simply Delish)
To Top:
- Powdered Sugar
- Fat Free Whipped Cream (Reddi)
- Lemon Zest
Instructions
- Preheat oven to 350°.
- French Toast Base: In a large bowl, add in all of your ingredients besides the cubed bread and blueberries. Whisk until smooth and then toss in your bread. Evenly coat everything and then mix in the blueberries. Pour the mixture into a lightly oil sprayed baking dish (I used an 7.5”x11”). Even it out and then bake for 30-35 minutes.120 ml (0.5 cups) Low Fat Buttermilk, 120 ml (0.5 cups) Protein Plant Milk, 2 Whole Large Eggs, 15 g (2 tbsp) Vanilla Protein Powder, 1 small Lemon, 15 ml (1 tbsp) Sugar Free Syrup, 1 tsp Vanilla Extract, 1/2 tsp (½ tsp) Cinnamon, Pinch of Salt, 8 slices of Protein Bread, 1 cup Blueberries
- Lemon Pudding Custard: Meanwhile, add in your sauce ingredients to a small pot. Simmer on low heat while continuously whisking. Keep at a low boil and whisk until the bread base is done.120 ml (0.5 cups) Low Fat Buttermilk, 7 g (0.5 tbsp) Unsalted Butter, 7 g (0.5 tbsp) Vanilla Protein Powder, 6 g (0.5 tbsp) Sugar Free Lemon Instant Pudding Mix
