Now, these baked potatoes are loaded with color and flavor, boasting a generous dollop of Greek yogurt in place of sour cream for a protein punch, and sprinkled with crispy, plant-based bacon that will make even the most devoted meat-lovers pause for appreciation.

Cheese Vegetarian Loaded Baked Potato
Ingredients
- 1 Medium (~330g) Russet Potato
- Olive Oil Spray
- Salt & Pepper
Yogurt Sour Cream:
- 56 g Non Fat Greek Yogurt (Siggi’s)
- 1 small Lemon Wedge
- ½ tsp White Vinegar
Toppings:
- 3 Strips Smart Bacon (LightLife)
- ½ tbsp Unsalted Butter (VitalFarms)
- 40 g Frozen Broccoli (steamed)
- 28 g Reduced Fat Shredded Mexican Cheese (Weight Watchers)
- 5 g Green Onion (chopped)
Instructions
Potato Prep:
- Cut your potato in half, this will help it cook faster!1 Medium (~330g) Russet Potato
- Spray both sides with olive oil and sprinkle with salt.Olive Oil Spray, Salt & Pepper
- Bake face down at 350° for 25-30 mins.
Yogurt Sour Cream:
- Meanwhile, prep your “sour cream” but mixing together the yogurt, lemon juice, vinegar, and sprinkle of salt.56 g (0.25 cups) Non Fat Greek Yogurt, 1 small Lemon Wedge, 1/2 tsp White Vinegar
Toppings:
- Chop your “bacon” and cook in a pan with olive oil spray until crispy (5-6 mins).3 Strips Smart Bacon
- Once your potato is ready, use a fork to fluff up the insides.
- Add in your sliced butter to each half potato and let it melt in.1/2 tbsp Unsalted Butter
