Miso Tofu Spring Rolls with Peanut Sauce
Ingredients
Rolls:
- 4 Brown Rice Spring Roll Wrappers (StarAnise)
- 24 g Noodles (Ty Ling)
- 120 g Miso Tofu (Hodo Foods)
- Lettuce
- Fresh Cilantro
- Carrot (strips)
- Cucumber (strips)
- 30 g Avocado (sliced)
Peanut Sauce:
- 13 g Powdered Peanut Butter (PB2)
- ½ tbsp Low Sodium Soy Sauce (Fusia)
- ¼ tbsp Rice Vinegar
- ¼ tbsp Hot Sauce
- ~1/2 tbsp Water
To Top:
- Fresh Cilantro
- Sesame Seeds
Instructions
- Start by cooking your noodles per instructions.24 g (0.5 cups) Noodles
- Then cut your tofu into small match sticks and cook in a pan with the remaining miso marinade from the package.120 g (0.5 cups) Miso Tofu
- While that’s cooking, make your peanut sauce by mixing the ingredients together in a small bowl until smooth. Add some water gradually to get desired consistency.13 g (2 tbsp) Powdered Peanut Butter, 1/2 tbsp Low Sodium Soy Sauce, 1/4 tbsp Rice Vinegar, 1/4 tbsp Hot Sauce, ~1/2 tbsp Water
- Dip each rice paper in some warm water. Flip over and repeat until malleable. Transfer to a working surface and start to add in your filling ingredients.4 Brown Rice Spring Roll Wrappers, Lettuce, Fresh Cilantro, Carrot, Cucumber, 30 g (2 tbsp) Avocado
