Double Crunch Mexican Pizza
Ingredients
Pizza:
- 52 g Veggie Crumbles (frozen, Morningstar Farms)
- 1 tbsp Red Enchilada Sauce (Mi Tienda)
- 65 g Refried Black Beans (H-E-B)
- 2 Corn Tortillas (Mi Rancho)
- Olive Oil Spray
- 1 tbsp Enchilada Sauce
- 28 g Mexican Shredded Cheese (Weight Watchers)
Yogurt Sauce:
- 56 g Nonfat Greek Yogurt (Siggi’s)
- ⅛ Lime (juiced)
- ½ tsp Hot Sauce (Tapatio)
- 2-4 tbsp Water
Toppings:
- Tomatoes (chopped)
- Red Onion (chopped)
- Fresh Cilantro (chopped)
- Lime Juice
Instructions
Pizza:
- In a pan, cook your veggie crumbles with 1 tbsp of your enchilada sauce.52 g (0.75 cups) Veggie Crumbles, 1 tbsp Red Enchilada Sauce
- Sauté for 5-6 mins until soft and then set aside.
- Heat your refried black beans in a small bowl for 30 seconds.65 g (0.33 cups) Refried Black Beans
- Add your corn tortillas to a baking sheet or air fryer basket and spray each side with some oil.2 Corn Tortillas, Olive Oil Spray
- Air fry at 375° for 2 mins, flipping halfway. Keep any eye on them as temperatures can vary.
- They should get nice and crispy but can burn quick so be careful!
Yogurt Sauce:
- Add your ingredients to a small bowl and mix until smooth.56 g (0.25 cups) Nonfat Greek Yogurt, 1/8 Lime, 1/2 tsp Hot Sauce
- Add water to achieve desired consistency. I wanted it to be drizzle-able so I did roughly 3 tbsp.2-4 tbsp Water
Assemble:
- Take one crispy tortilla and layer it with your refried beans and veggie crumbles.
- Layer the second on top. Top with 1 tbsp of enchiladas sauce and spread evenly.1 tbsp Enchilada Sauce
- Then, sprinkle with your cheese.28 g (2 tbsp) Mexican Shredded Cheese
- Add back to your air fryer/oven and cook at 375° for 2-3 mins until cheese has melted.
Toppings:
- Meanwhile, prep your toppings.
- Once the pizza is ready, add in your toppings.Tomatoes, Red Onion, Fresh Cilantro
- Drizzle on that delicious sauce and squeeze on some lime juice.Lime Juice
- Slice into quarters and dig in!
