Crunchy Breakfast Enchilada Tostadas
Ingredients
Refried Beans:
- 75 g Black Beans
- ¼ cup Water (or broth)
- Chili Powder, Smoked Paprika, Cayenne, Salt & Pepper (to taste)
Crema:
- 30 g Low Fat Cottage Cheese (Good Culture)
- ⅛ Lime (juiced)
- 1-2 cloves Garlic
- Chili Powder (to taste)
- 1-2 tbsp Water
Eggs:
- ¼ cup Enchilada Sauce
- 2 Brown Eggs (Vital Farms)
Tostadas:
- 2 Small Corn Tortillas
- ½ tsp Avocado Oil
To Top:
- Red Onion (thinly sliced)
- Fresh Cilantro
- Lime (juiced)
- 28 g Fat Free Feta (Cafe Olympia)
Instructions
Refried Black Beans:
- Add your ingredients to a small pot and bring to a simmer. Cook for 3-4 mins.75 g (0.5 cups) Black Beans, 1/4 cup Water, Chili Powder, Smoked Paprika, Cayenne, Salt & Pepper
- Mash with a fork or masher until refried consistency. Add water if too dry.
Crema:
- Add ingredients to a blender and blend until smooth. Adjust water for desired consistency.30 g (2 tbsp) Low Fat Cottage Cheese, 1/8 Lime, 1-2 cloves Garlic, Chili Powder, 1-2 tbsp Water
Eggs:
- In a small pan, add in your enchilada sauce to the middle and crack in your eggs.1/4 cup Enchilada Sauce, 2 Brown Eggs
- Cover and cook until whites set.
Tostadas:
- Rub your oil on both sides of your tortillas. Air fry at 400° for about 3 mins, flipping halfway.2 Small Corn Tortillas, 1/2 tsp Avocado Oil
- Be sure to keep an eye on them as air fryer temps can vary!
