Almond Croissant Cinnamon Rolls
Ingredients
Almond Paste Filling:
- 30 g Almond Flour (Nature’s Eats)
- 14 g Unflavored Protein Powder (Quest)
- 15 g Coconut Sugar (Big Tree Farms)
- 15 g Zero Calorie Sweetener (H-E-B)
- ¼ tsp Almond Extract
- ½ tsp Vanilla Extract
- 1 Large Brown Egg (Vital Farms)
- 14 g Unsalted Butter (softened (Vital Farms))
Cinnamon Roll Dough:
- 120 g Self Rising Flour + some for kneading (King Arthur)
- 14 g Unflavored Protein Powder (Quest)
- 170 g Plain Nonfat Greek Yogurt (Siggi’s)
Cream Cheese Icing:
- 42 g Reduced Fat Cream Cheese (Philadelphia)
- 30 g Powdered Sugar
- ¼ tsp Almond Extract
To Top:
- 14 g Sliced Almonds (Fisher)
- Powdered Sugar
Instructions
Almond Paste Filling:
- Add all your ingredients together in a mixing bowl and mix until smooth. It should be a nice thick paste.30 g (0.25 cups) Almond Flour, 14 g (2 tbsp) Unflavored Protein Powder, 15 g (2 tbsp) Coconut Sugar, 15 g (2 tbsp) Zero Calorie Sweetener, 1/4 tsp Almond Extract, 1/2 tsp Vanilla Extract, 1 Large Brown Egg, 14 g (1 tbsp) Unsalted Butter
Cinnamon Roll Dough:
- In a large mixing bowl, add in your ingredients and mix with a spoon.120 g (1 cups) Self Rising Flour + some for kneading, 14 g (2 tbsp) Unflavored Protein Powder, 170 g (0.75 cups) Plain Nonfat Greek Yogurt
- Then flour your counter and pour out the dough. Start to knead it with your hands until incorporated into a dough.
- Flour a rolling pin and start to roll it out into a nice even rectangle shape.
Assemble:
- Preheat oven to 350°.
- Spread your almond paste evenly onto your dough until smooth.
- Then start to roll it in into a log shape from the short end.
- Cut off the ends and then cut the log into and even 6 pieces.
- Place in a small baking sheet sprayed with olive oil.
- Bake for 18-20 mins until golden brown.
Cream Cheese Icing:
- While your cinnamon rolls bake, add your icing ingredients to a small bowl. Use a spoon or handheld blender to get it nice and smooth.42 g (1.5 oz) Reduced Fat Cream Cheese, 30 g (0.25 cups) Powdered Sugar, 1/4 tsp Almond Extract
- Once your cinnamon rolls have cooked, let them cool for at least 10-15 mins before icing.
- Sprinkle with your sliced almonds and some more powdered sugar.14 g (1.5 tbsp) Sliced Almonds, Powdered Sugar
