Ingredients

Tofu:

  • 142 g Extra Firm High Protein Tofu (Hodo)
  • 3 g Tapioca Flour (Bobs Red Mill)
  • Salt & Pepper (to taste)
  • 1 tsp Garlic Powder
  • ยฝ tsp Onion Powder

Buffalo Sauce:

  • 30 ml Spicy Buffalo Sauce (H-E-B)
  • 5 g Sugar Free Syrup (Mrs Buttersworth)
  • Salt (to taste)

Garlic Yogurt:

  • 56 g Nonfat Greek Yogurt (Fage)
  • 7 g Grated Parmesan
  • ยผ Lemon (juiced)
  • ยผ tsp Garlic (minced)
  • Salt & Pepper (to taste)
  • 1-2 tbsp Water (to thin)

  • 2 handfuls of Lettuce

Tofu:

  • Tear your tofu into chunks or cube with a knife. Add to a bowl with the remaining ingredients. Toss evenly and add to your air fryer basket. You can spray with oil but I donโ€™t find it necessary. Air fry at 375ยฐ for 10-12 minutes until crispy.
    142 g (5 oz) Extra Firm High Protein Tofu, 3 g (0.5 tbsp) Tapioca Flour, Salt & Pepper, 1 tsp Garlic Powder, 1/2 tsp Onion Powder

Buffalo Sauce:

  • In the same bowl you prepped your tofu, add in your buffalo sauce and syrup and mix. Once the tofu is cooked, add it in and evenly toss.
    30 ml (2 tbsp) Spicy Buffalo Sauce, Salt, 5 g (1 tsp) Sugar Free Syrup

Garlic Yogurt:

  • Mix together your yogurt dressing ingredients in a small bowl until smooth. Add more or less water to get desired consistency. I like it runny, similar to a ranch dressing.
    56 g (0.25 cups) Nonfat Greek Yogurt, 7 g (1.5 tbsp) Grated Parmesan, 1/4 Lemon, 1/4 tsp Garlic, Salt & Pepper, 1-2 tbsp Water
