Ingredients

Tofu:

  • 100 g High Protein Extra Firm Tofu (Trader Joeโ€™s)
  • ยฝ tbsp Tapioca Flour (Bobโ€™s Red Mill)
  • Salt & Pepper (to taste)
  • Avocado Oil Spray

Couscous:

  • 55 g Tri-Color Pearl Couscous (Bobโ€™s Red Mill)
  • 80 ml Mushroom Broth (Pacific Foods)
  • 2 tbsp Water

Veggies:

  • ยฝ tbsp Olive Oil
  • 35 g each Red (Orange, Yellow Bell Pepper)
  • 50 g Broccoli Florets (or sub cucumber)
  • Large Handful of Spinach & Arugula Mix
  • 3-4 leaves Basil
  • ยฝ Lemon (juiced)

To Top:

  • 28 g Fat Free Feta (Cafe Olympia)
  • Microgreens

Instructions

Tofu:

  • Cube your tofu and add to a plastic bag with the flour, salt & pepper. Zip and shake to mix.
    100 g (3.5 oz) High Protein Extra Firm Tofu, 1/2 tbsp Tapioca Flour, Salt & Pepper
  • Add to an air fryer basket, spray with avocado oil, and air fry at 400ยฐ for 10-12 mins until crispy.
    Avocado Oil Spray

Couscous:

  • Add your broth and water to a small pot and bring to a boil. Add in the couscous, lower the heat, and cover.
    55 g (0.3 cups) Tri-Color Pearl Couscous, 80 ml (0.3 cups) Mushroom Broth, 2 tbsp Water
  • Cook for 10-15 mins until liquid is absorbed.

Veggies:

  • Cut your bell pepper into thin slivers. Add oil to a large pan and sautรฉ the peppers and broccoli until soft (~10 mins).
    1/2 tbsp Olive Oil, 35 g (0.25 cups) each Red, 50 g (0.5 cups) Broccoli Florets
  • Add in your greens, basil, couscous, and tofu.
    Large Handful of Spinach & Arugula Mix, 3-4 leaves Basil, 1/2 Lemon
  • Stir everything together and drizzle with lemon juice.

To Serve:

  • Serve fresh in a bowl. Top with feta & microgreens.
    28 g (2 tbsp) Fat Free Feta, Microgreens
