Mediterranean Couscous Tofu Salad
Ingredients
Tofu:
- 100 g High Protein Extra Firm Tofu (Trader Joe’s)
- ½ tbsp Tapioca Flour (Bob’s Red Mill)
- Salt & Pepper (to taste)
- Avocado Oil Spray
Couscous:
- 55 g Tri-Color Pearl Couscous (Bob’s Red Mill)
- 80 ml Mushroom Broth (Pacific Foods)
- 2 tbsp Water
Veggies:
- ½ tbsp Olive Oil
- 35 g each Red (Orange, Yellow Bell Pepper)
- 50 g Broccoli Florets (or sub cucumber)
- Large Handful of Spinach & Arugula Mix
- 3-4 leaves Basil
- ½ Lemon (juiced)
To Top:
- 28 g Fat Free Feta (Cafe Olympia)
- Microgreens
Instructions
Tofu:
- Cube your tofu and add to a plastic bag with the flour, salt & pepper. Zip and shake to mix.100 g (3.5 oz) High Protein Extra Firm Tofu, 1/2 tbsp Tapioca Flour, Salt & Pepper
- Add to an air fryer basket, spray with avocado oil, and air fry at 400° for 10-12 mins until crispy.Avocado Oil Spray
Couscous:
- Add your broth and water to a small pot and bring to a boil. Add in the couscous, lower the heat, and cover.55 g (0.3 cups) Tri-Color Pearl Couscous, 80 ml (0.3 cups) Mushroom Broth, 2 tbsp Water
- Cook for 10-15 mins until liquid is absorbed.
Veggies:
- Cut your bell pepper into thin slivers. Add oil to a large pan and sauté the peppers and broccoli until soft (~10 mins).1/2 tbsp Olive Oil, 35 g (0.25 cups) each Red, 50 g (0.5 cups) Broccoli Florets
- Add in your greens, basil, couscous, and tofu.Large Handful of Spinach & Arugula Mix, 3-4 leaves Basil, 1/2 Lemon
- Stir everything together and drizzle with lemon juice.
To Serve:
