Egg Sandwich Cucumber Salad
Ingredients
- 2 Large Brown Eggs (Vital Farms)
- 1 English Cucumber (sliced)
- ¼ small Red Onion (chopped)
- 2 stalks Green Onion (sliced)
- 1 tsp Dill (minced)
- 1 tbsp Pickle Juice
- 56 g Nonfat Greek Yogurt (Siggi’s)
- 1 tsp Yellow Mustard
- Salt & Pepper (to taste)
- ½ tsp Smoked Paprika
- ½ tsp Crushed Red Pepper
Instructions
- Hard your eggs to salted boiling water and cook for 10 minutes.2 Large Brown Eggs
- Once time is up, transfer immediately to a bowl with cold water with ice. This will stop the cooking process. Let them cool while you prepare the rest.
- Use a mandolin slices, a food processor with a slicer, or a knife to thinly slice your cucumber. Be careful regardless!1 English Cucumber
- Prepare your onion, green onion, and dill as well.1/4 small Red Onion, 2 stalks Green Onion, 1 tsp Dill
- In a container with a lid, add in your cucumber. Then grab peel your eggs and use your hands to crumble them up on top.
- Add in all the remaining ingredients. Close the lid and shake until all is evenly combined.1 tbsp Pickle Juice, 56 g (2 tbsp) Nonfat Greek Yogurt, 1 tsp Yellow Mustard, Salt & Pepper, 1/2 tsp Smoked Paprika, 1/2 tsp Crushed Red Pepper
- Serve and top with more dill and crushed red pepper! Unlike Logan, I was not able to eat this all in one sitting lol but you most certainly can try or save the leftover to enjoy later!
