Crispy Tofu Veggie Rice Bowl
Ingredients
Thai Peanut Sauce:
- 12 g Powdered Peanut Butter (PB2)
- ½ tbsp Reduced Sodium Soy Sauce
- ½ tbsp Sriracha
- ½ tbsp Rice Vinegar
- ½ tsp Minced Ginger
- ½ tsp Minced Garlic
Bowl:
- 80 g Jasmine Rice (frozen)
- 1 Serving Crispy Tofu
- 50 g Broccoli Florets
- 50 g Red Cabbage (sliced)
- 5-6 Cucumber (sliced)
- Small Handful Cilantro (chopped)
- 5 g Green Onion (sliced)
- 8 g Unsalted Peanuts (chopped)
- 1 Serving Thai Sauce (see above)
- 1 Serving Hot “Honey”
Instructions
- Prep all your veggies for the bowl. Chop your peanuts and set aside as well.1/2 tsp Minced Ginger, 1/2 tsp Minced Garlic, 50 g (0.5 cups) Broccoli Florets, 50 g (0.5 cups) Red Cabbage, 5-6 Cucumber, Small Handful Cilantro, 5 g (1 tbsp) Green Onion, 8 g (0.5 tbsp) Unsalted Peanuts
- Hot “Honey”: Optional to prep your hot honey ahead of time as well and use 1 serving for this bowl.1 Serving Hot “Honey”
- Crispy Tofu: I prepped my crispy tofu ahead of time to use for different meals so if using, pop them back into the air fryer at 375° for 5-6 mins. If making fresh, then follow the recipe linked. Use only 1 serving of tofu for the bowl.1 Serving Crispy Tofu
- Thai Sauce: Mix together ingredients & add 1-2 tbsp of water for desired consistency.12 g (2 tbsp) Powdered Peanut Butter, 1/2 tbsp Reduced Sodium Soy Sauce, 1/2 tbsp Sriracha, 1/2 tbsp Rice Vinegar
- For the rice, I used frozen so add to your serving bowl and microwave for 1-2 mins.80 g (0.5 cups) Jasmine Rice
- Now build your bowl! Add your crispy tofu atop the bed of rice. Then add in the veggies and peanuts for that crunch. Finally drizzle on your Thai peanut sauce and hot “honey”!1 Serving Thai Sauce
