Ingredients

Sweet Potato:

  • 200 g Sweet Potato (cubed)
  • Olive Oil Spray
  • Salt & Pepper (to taste)

Vegan Beef:

  • 83 g Beef-Less Ground Beef (Trader Joeโ€™s)
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • ยฝ tsp Smoked Paprika
  • ยฝ tsp Cayenne

Bowl:

  • 110 g Low Fat Cottage Cheese (Good Culture)
  • Salt & Pepper (to taste)
  • 14 g Fat Free Feta (Athenos)
  • 25 g Avocado (sliced)
  • Microgreens
  • 1 serving Hot โ€œHoneyโ€

Instructions

Sweet Potato:

  • Wash and cube your sweet potato. Add to your baking sheet and spray with olive oil.
    200 g (1 small) Sweet Potato, Olive Oil Spray
  • Season with salt and pepper, to taste. Give it a good mix. Air fry at 350ยฐ for 10-15 minutes.
    Salt & Pepper

Vegan Beef:

  • To a pan on medium heat, add your beef and add the seasoning. Mix and cook for 5-6 minutes.
    83 g (oz) Beef-Less Ground Beef, 1 tsp Chili Powder, 1 tsp Cumin, 1 tsp Garlic Powder, 1/2 tsp Smoked Paprika, 1/2 tsp Cayenne

Bowl:

  • To your bowl, add the vegan beef, sweet potato, and your cottage cheese. Season the cottage cheese with salt and pepper to taste.
    110 g (0.5 cups) Low Fat Cottage Cheese, Salt & Pepper
  • Add feta to the sweet potatoes and sliced avocado to the middle. Garnish with microgreens.
    14 g (1 tbsp) Fat Free Feta, 25 g Avocado, Microgreens
  • Finish it off with a drizzle of your sugar free hot โ€œhoneyโ€ and enjoy!
