Lemon Curd Overnight Oats
Ingredients
Oatmeal:
- 80 g Old Fashioned Oats (H-E-B)
- 240 ml Protein Plant Milk (Good Karma)
- 28 g Unflavored Protein Powder (Quest)
- 170 g Nonfat Greek Yogurt (Siggi’s)
- 2 tsp Vanilla Extract
- ½ Small Lemon (juiced)
- 30 ml Sugar Free Syrup (Mrs Butterworths)
- 14 g Sugar Free Lemon Instant Pudding Mix (Simply Delish)
To Top:
- 30 g Fat Free Whipped Cream (Reddi)
- 4 servings Lemon Curd
- 12 g Oatmeal Raisin Cookie Granola (Purely Elizabeth)
Instructions
Oatmeal:
- Add all your ingredients to a bowl or two separate mason jars.80 g (1 cups) Old Fashioned Oats, 240 ml (1 cups) Protein Plant Milk, 28 g (0.25 cups) Unflavored Protein Powder, 170 g (0.75 cups) Nonfat Greek Yogurt, 2 tsp Vanilla Extract, 30 ml (2 tbsp) Sugar Free Syrup, 14 g (1.5 tbsp) Sugar Free Lemon Instant Pudding Mix, 1/2 Small Lemon
- Mix together really well and then refrigerate overnight.
- If making in the morning, mix together your oatmeal and milk and microwave for 2-3 minutes. Then add in all the remaining ingredients. Refrigerate to chill for at least at least 15 minutes to let it cool.
Lemon Curd:
- Prepare your lemon curd according to the recipe. You will need the full amount for each of your oatmeal servings.
Assemble:
- Grab two serving glasses. Everything will be split evenly between the two. Start off by adding your oatmeal to each glass.
To Top:
- Top with your whipped cream and lemon curd.30 g (.5 cups) Fat Free Whipped Cream, 4 servings Lemon Curd
- Top with some crunchy granola and a lemon slice for a garnish. Then dig in!12 g (1 tbsp) Oatmeal Raisin Cookie Granola
