Homemade Lemon Curd
Ingredients
- 1 Large Brown Egg (Vital Farms)
- 32 g Zero Calorie Sugar (H-E-B)
- ½ Large Lemon (juiced)
- 1 tsp Lemon Zest
- 14 g Unsalted Butter (Vital Farms)
Instructions
- In a small pot (not on heat yet), crack in your egg and whisk until smooth.1 Large Brown Egg
- Add in your sugar, lemon juice, and lemon zest. Give it a good mix.32 g (4 tsp) Zero Calorie Sugar, 1/2 Large Lemon, 1 tsp Lemon Zest
- Finally, add in your butter and place on a stove on low to medium heat.14 g (1 tbsp) Unsalted Butter
- Let it start to warm up and continuously whisk until it thickens. This will take roughly 5 minutes.
- Remove from heat and let it completely cool. Add your lemon curd to a jar or container and keep in the fridge for up to a week.
- Use for a multitude of different recipes! When ready to enjoy again – if it has thickened – add a small splash of water and mix until desired consistency. You can also hear in the microwave for 10 seconds to soften again.
