Lemon Greek Yogurt Pudding:

  • 226 g 0% Milkfat Greek Yogurt (Fage)
  • 45 ml Nonfat Plain Milk (Whole Foods)
  • 1 tbsp Lemon Juice
  • 31 g Vanilla Protein Powder (Quest)
  • 12 g Lemon Instant Pudding Mix (Simply Desserts)

Ladyfingers:

  • 1 tbsp Lemon Juice
  • 2 tbsp Water
  • 7 g Powdered Sugar (Whole Foods)
  • 33 g Ladyfingers (Forno Bonomi)

Lemon Curd:

  • 50 g Large Brown Egg (Vital Farms)
  • 14 g Unsalted Butter (Vital Farms)
  • 1 tsp Lemon Juice
  • ยฝ tsp Lemon Zest
  • 32 g Zero Calorie Sweetener (H-E-B)

Topping:

  • Powdered Sugar

Instructions

Lemon Greek Yogurt Pudding:

  • In a large mixing bowl, add in all your ingredients and mix until smooth and fluffy. In a small dish (wide enough to fit a ladyfinger lengthwise) spread a little less than half the pudding in an even layer.
    226 g (1 cup) 0% Milkfat Greek Yogurt, 45 ml (3 tbsp) Nonfat Plain Milk, 31 g (1 scoop) Vanilla Protein Powder, 12 g (1 tbsp) Lemon Instant Pudding Mix, 1 tbsp Lemon Juice

Ladyfingers:

  • In a small bowl, add your lemon juice, water, and powdered sugar. Then dip one ladyfinger at a time and place on one end on top of the lemon Greek yogurt. Repeat and lay them all down side by side.
    1 tbsp Lemon Juice, 2 tbsp Water, 7 g (0.5 tbsp) Powdered Sugar, 33 g (4 whole) Ladyfingers
  • Spoon over the remaining yogurt and spread across as evenly as possible. Place it in the fridge to set for at least 2 hours.

Lemon Curd:

  • In a small pot, crack in your egg and whisk. Be sure to only use utensils safe for your potโ€™s material (for example: no metal in nonstick pans, etc.).
    50 g (1 whole) Large Brown Egg, 14 g (1 tbsp) Unsalted Butter, 1 tsp Lemon Juice, 1/2 tsp Lemon Zest, 32 g (2.5 tbsp) Zero Calorie Sweetener
  • Then add in the remaining ingredients and mix. Now place over your stove and set to low to medium heat. Continuously whisk the mixture to cook. You want a smooth curd and not scrambled eggs!
  • Give it about 5 minutes to thicken and coat the back of your spoon/spatula. Then remove from heat and transfer to a bowl or jar.
  • Let it cool at room temperature or place in fridge if it would be longer than 2 hours.
  • Once youโ€™re ready for your tiramisu, spread the lemon curd on top in an even layer.

Toppings:

  • Dust the top with powdered sugar if desired. Then scoop out 1/4th of the tiramisu into your serving dish and enjoy!
