- 2 Vegan Breakfast Sausages (MorningStar Farms)
- 4 g Unsalted Butter (Vital Farms)
- 8 g All-Purpose Flour (King Arthur)
- 5 g Unflavored Protein Powder (optional, Quest Baking)
- 180 ml Unflavored Plant Milk (Good Karma)
- Salt & Pepper (to taste)
- Olive Oil Spray
- Everything but the Bagel Seasoning
Egg White Scramble:
- 92 g Egg Whites
- 16 g Reduced Fat Mexican Cheese (Weight Watchers)

Instructions
- Roll out your crescent roll dough and tear in half. Pinch all the perforated seams and use two triangles to make one rectangle. Cut in half and add each square to a muffin tin sprayed with olive oil.
- Preheat oven to 375°.
- In a medium saucepan, crumble in your breakfast sausage. Add in the butter and sauté. Then add in your flour and evenly mix. Slowly start to add in your milk in a few batches at a time until the sauce starts to thicken. Season with salt & pepper. Cook for roughly 5-6 mins.
- Equally divide the gravy into your 4 muffin tins. Save any extra gravy to top but mine used it all perfectly! Fold the top corners over to enclose. Spray with oil and sprinkle with everything but the bagel seasoning. Bake for 14-15 mins.
- Meanwhile, prep an egg scramble on the side if desired! Cook your eggs in a medium pan with salt & pepper. Add in cheese and any desired veggies. I did red onion and jalapeños.
- Let them cool slightly and then enjoy with your eggs or just as a snack by itself!
