Tortilla Baked Quiche
Ingredients
- 1 Large Flour Tortilla (Trader Joes)
- 2 Large Brown Eggs (Vital Farms)
- 46 g Egg Whites
- 55 g Low Fat Cottage Cheese (Good Culture)
- Salt & Pepper
- 5-6 Cherry Tomatoes (halved)
- Small Handful of Spinach (chopped)
- 28 g Fat Free Mozzarella (H-E-B)
Instructions
- Grab a round baking dish and spray lightly with oil. Then add in your flour tortilla. It shouldn’t have any gaping holes.1 Large Flour Tortilla
- Crack in your eggs and add in the egg whites right on top of the tortilla. Add the cottage cheese as well and give everything a good whisk.2 Large Brown Eggs, 46 g (3 tbsp) Egg Whites, 55 g (0.25 cups) Low Fat Cottage Cheese
- Season with salt & pepper and any other herbs you may like. Whisk again.Salt & Pepper
- Top with your favorite toppings. I did cherry tomatoes, spinach, and mozzarella cheese.5-6 Cherry Tomatoes, Small Handful of Spinach, 28 g (0.25 cups) Fat Free Mozzarella
- Bake at 350° for 20-25 minutes. The center should not be jiggly to ensure the eggs have cooked, so keep checking on it.
- Slice into quarters and enjoy!
