Grab a round baking dish and spray lightly with oil. Then add in your flour tortilla. It shouldn’t have any gaping holes.
1 Large Flour Tortilla
Crack in your eggs and add in the egg whites right on top of the tortilla. Add the cottage cheese as well and give everything a good whisk.
2 Large Brown Eggs, 46 g(3tbsp) Egg Whites, 55 g(0.25cups) Low Fat Cottage Cheese
Season with salt & pepper and any other herbs you may like. Whisk again.

Top with your favorite toppings. I did cherry tomatoes, spinach, and mozzarella cheese.
5-6 Cherry Tomatoes, Small Handful of Spinach, 28 g(0.25cups) Fat Free Mozzarella
Bake at 350° for 20-25 minutes. The center should not be jiggly to ensure the eggs have cooked, so keep checking on it.
