Strawberry Pistachio Baked Oats

The Dreamiest Baked Oats Combo

Strawberry pistachio baked oats are officially the breakfast Iโ€™m most obsessed with right now. Cozy, fluffy, high in protein, and loaded with juicy strawberries and creamy pistachio butterโ€”itโ€™s the kind of meal prep breakfast that feels indulgent but fuels you for the day. Plus, itโ€™s gluten-free, naturally sweetened, and wildly easy to make.

Slice of strawberry pistachio baked oats topped with a dollop of yogurt, pistachio butter drizzle, and chopped pistachios, served on a white plate with the full baked dish in the background.

Why You’ll Love these Strawberry Pistachio Baked Oats

If youโ€™re a baked oats fan, this oneโ€™s about to be your new favorite. The base comes together in minutesโ€”just mash a banana, stir in your dry and wet ingredients, and fold in some chopped strawberries. Then swirl pistachio butter on top (trust me, donโ€™t skip this step) and finish it off with a sprinkle of crushed pistachios before baking. The result? A golden-topped oatmeal bake that tastes like dessert and eats like a power breakfast.

Each bite is soft, nutty, and full of flavor thanks to the combo of sweet berries and rich pistachio oats. Itโ€™s perfect for slicing into squares and storing in the fridge for a grab-and-go option all week long. Top it with yogurt, a drizzle of extra pistachio butter, or just enjoy it as-is straight from the fridge.

This strawberry baked oats meal prep is simple, satisfying, and seriously too good not to make on repeat.
