French Toast:

  • In a shallow dish, add in all your ingredients and whisk together.
    50 g (3.5 tbsp) Liquid Egg Whites, 15 ml (1 tbsp) Nonfat Milk or Coconut Milk, 1 tsp Vanilla Extract, 5 g (0.5 tbsp) Desiccated or Shredded Coconut
  • Dip a slice of bread and evenly coat but donโ€™t let it get soggy. Make sure you scoop out some of the shredded coconut on there.
    3 slices 100% Whole Wheat Grain Sugar Free Bread
  • In a pan on medium heat, spray some olive oil and then add in the soaked slices of bread. Cook until golden brown on each side. Repeat for all 3 slices and set side.

  • Remove and use a fork to smash the berries. Then microwave again for 30 seconds. The berries should be pretty much mashed and soft like a jelly. Set aside.

Coconut Yogurt Cream:

  • In a mixing bowl, add in the yogurt ingredients and whisk until smooth and set aside.
    113 g (0.5 cups) 0% Milkfat Yogurt, 30 ml (2 tbsp) Nonfat Milk or Coconut Milk, 7 g (0.5 tbsp) Vanilla Instant Pudding Mix, 5 g (0.5 tbsp) Desiccated or Shredded Coconut
