Key Ingredients for these Pumpkin Spice Protein Crepes

To create these cozy and delicious pumpkin pie protein crepes, letโ€™s break down the star ingredients that make this fall-inspired breakfast so special. Each one plays an important role in creating the perfect balance of flavor, protein, and texture.

  • Large Brown Egg: Helps bind the crepe batter together while adding protein and richness for soft and tender crepes.
  • Pumpkin Purรฉe: Brings the essential fall flavor into every bite. It also helps keep the crepes moist while giving them that classic pumpkin pie vibe.
  • Nonfat Milk: Keeps the crepe batter light and thin so it spreads easily across the pan while still providing a creamy base.
  • Vanilla Protein Powder: Boosts the protein content while adding a subtle vanilla sweetness that pairs perfectly with pumpkin spice.
  • All Purpose Flour: Provides structure and stability so the crepes hold together while staying soft and flexible.
  • Pumpkin Pie Spice: A cozy blend of cinnamon, nutmeg, ginger, and cloves that ties everything together with warm fall flavor.
  • Olive Oil Spray: A quick spritz to prevent sticking and ensure your pumpkin crepes cook up beautifully golden.

For the filling:

  • Greek Yogurt: Thick, creamy, and packed with proteinโ€”it creates the luscious base for your pumpkin pie yogurt filling.
  • Pumpkin Purรฉe: Adds even more pumpkin goodness to the filling, enhancing that pumpkin pie flavor.
  • Pumpkin Pie Spice: Doubles down on the cozy warmth to keep every layer spiced to perfection.
  • Water: Helps adjust the consistency of the filling so it spreads smoothly into the crepes.

For the toppings:

  • Chopped Pecans: Adds crunch and a nutty flavor that pairs beautifully with pumpkin and spice.
  • Sugar Free Syrup: A sweet finishing drizzle without the extra sugarโ€”perfect for balancing all the cozy flavors.

Substitution Options

Everyone has different preferences or dietary needs, and the best part is that pumpkin pie protein crepes are easy to customize. Whether youโ€™re looking to make them gluten-free, dairy-free, or simply adjust for taste, here are some great options to try.

  • Egg: Replace with a flax egg or chia egg if you want to keep the crepes plant-based.
  • Pumpkin Purรฉe: Try sweet potato purรฉe or butternut squash purรฉe for a slightly different twist while keeping the fall flavor.
  • Nonfat Milk: Swap for almond milk, oat milk, or flax milk for a dairy-free alternative that still keeps the batter light.
  • Vanilla Protein Powder: Use your favorite protein flavorโ€”cinnamon, pumpkin spice, or even plain unflavored will all work well.
  • All Purpose Flour: Make these gluten-free by using oat flour or a 1:1 gluten-free baking flour blend.
  • Greek Yogurt: Swap with a plant-based yogurt for a dairy-free pumpkin pie yogurt filling thatโ€™s still creamy and delicious.
  • Chopped Pecans: Walnuts, almonds, or even pumpkin seeds can bring a different crunch and nutty note.
  • Sugar Free Syrup: Honey, maple syrup, or agave can be used instead if you prefer a more natural sweetener.

Donโ€™t be afraid to mix and match these substitutions to fit your needs. Thatโ€™s the beauty of pumpkin spiced crepesโ€”theyโ€™re versatile, forgiving, and always delicious no matter how you make them.

**If there is a sub I havenโ€™t mentioned above, itโ€™s because I have not tested it and canโ€™t speak for how well it would work for this recipe.

Equipment and Tools

The beauty of this recipe is that it doesnโ€™t require anything fancyโ€”you can easily make pumpkin spiced crepes with basic kitchen tools. Hereโ€™s everything youโ€™ll need to make them successfully:

  • Mixing Bowls: For whisking together the crepe batter and mixing the creamy pumpkin yogurt filling.
  • Sieve: To strain the batter and ensure itโ€™s smooth and lump-free.
  • Nonstick Pan: Essential for cooking thin, golden crepes without sticking.
  • Spatula: To flip the crepes gently and keep them from tearing.
  • Whisk: For combining ingredients into a smooth batter and creamy filling.
  • Measuring Scale: To keep ingredients precise, ensuring perfect consistency in your pumpkin pie crepes.
  • Measuring Cups & Spoons: For quick and accurate measuring of smaller ingredients like protein powder and spices.

With these simple tools, youโ€™ll be set up for success. Crepe-making might sound fancy, but once you have the basics ready, itโ€™s easier than you think. And with the reward of soft, protein-packed pumpkin pie crepes at the end, itโ€™s totally worth it!

How to Make Your Pumpkin Pie Protein Crepes

These high protein pumpkin pie crepes are surprisingly easy to make, and the prep time is minimal. With just a few simple steps, youโ€™ll be serving up a breakfast that tastes like dessert in no time.

pumpkin spice protein crepes 01

Make the Crepe Batter

In a mixing bowl, whisk together your egg, pumpkin purรฉe, milk, protein powder, flour, and pumpkin pie spice until smooth. For extra silky results, pour the batter through a sieve into another bowl to remove any lumps.

pumpkin spice protein crepes 02

Cook the Crepes

Lightly spray a nonstick pan with olive oil spray and heat on low-medium. Pour in a thin layer of batter, swirling to evenly coat the bottom.

Cook until small bubbles form and the edges lift, then carefully flip and cook the other side until golden. Repeat with the remaining batter.

Prepare the Filling

While the crepes are cooking, mix your Greek yogurt, pumpkin purรฉe, pumpkin spice, and water in a separate bowl until creamy. Adjust the water to reach your desired spreadable consistency.

Assemble the Crepes

Spread a layer of the pumpkin yogurt filling on one half of each crepe, then fold in half and fold again into a triangle. Repeat until all crepes are filled and folded.

Finish with Toppings

Arrange on a serving dish and top with extra pumpkin yogurt filling if desired, plus chopped pecans and a drizzle of syrup.

Thatโ€™s itโ€”youโ€™ve got yourself pumpkin pie crepes with pumpkin cream filling, the ultimate fall breakfast treat. Enjoy warm, fresh off the pan, and get ready for every bite to taste like pumpkin pie bliss.

Tips and Tricks

Here are some helpful tips and tricks to make your pumpkin pie protein crepes turn out beautifully every time. With these in your pocket, youโ€™ll feel like a crepe pro.

  • Donโ€™t overmix the batter: Stir just until combined. Overmixing can lead to tougher crepes rather than soft, tender pumpkin crepes.
  • Let batter rest briefly: A 5-minute rest lets the flour hydrate fully and reduces bubbles, giving you smoother crepes.
  • Use low to medium heat: Cooking too hot will burn the exterior before the inside is cooked. A gentle pan heat ensures golden, even pumpkin crepes.
  • Thin layers are key: Spread a thin coat of batter for delicate, flexible crepes that fold easily. Thick batter = crepe problems.
  • Adjust filling consistency: If your pumpkin yogurt filling is too thick, add water a teaspoon at a time until spreadable but not runny.
  • Warm crepes slightly before filling: A quick 5-second heat helps them stay pliable and less likely to crack when folding.
  • Toast pecans ahead: Lightly toasting chopped pecans enhances their flavor and adds an extra crunch against the soft crepes.

With these tricks, your high protein pumpkin pie crepes will look gorgeous and taste like fall perfection. Enjoy experimenting and making them your own!

Storage Instructions

Hereโ€™s how to keep your pumpkin pie protein crepes fresh and tasty for later enjoyment. Proper storage ensures you donโ€™t lose any of that cozy flavor.

  • Refrigeration: Store leftover pumpkin crepes in an airtight container in the fridge. Use within 2โ€“3 days for best texture.
  • Separate components (if possible): If you can, store the crepes and the pumpkin yogurt filling in separate containers so the crepes donโ€™t get soggy.
  • Layer with parchment: When stacking crepes, place parchment or wax paper between each layer to prevent them from sticking together.
  • Avoid freezing (for best quality): Freezing may change the texture of the crepes and filling, making them less pleasant once thawed.
  • Reheat gently: Warm them in a low-heat skillet or microwave (in short bursts) until just warmed throughโ€”donโ€™t overdo it or they may dry out.

By following these storage tips, your pumpkin crepes will stay flavorful and ready to enjoy againโ€”without losing that fresh-from-the-pan feel.

FAQs

Here are some FAQs I get asked often about these pumpkin pie protein crepes โ€” along with answers to keep your crepe adventures smooth and delicious.

  1. Can I make these pumpkin crepes gluten-free?

Yes! You can swap the all purpose flour for a 1:1 gluten-free baking flour or even oat flour. Just be mindful of how absorbent the flour isโ€”you might need to adjust the liquid slightly (a bit more milk or water) so the batter is still thin enough to swirl.

  2. Can I prepare the crepes the night before?

Absolutely. You can cook the crepes ahead and store them in the fridge, separated by parchment, to prevent sticking. The filling can also be mixed ahead and stored. Come morning, just assemble, warm gently, and top with pecans and syrup.

  3. Will the protein powder affect flavor or texture?

A littleโ€”if itโ€™s very strongly flavored, it might alter the taste slightly. Use a vanilla or mild flavor you like best. Too much protein powder can make the crepes denser, so stick close to the recipe amount or adjust liquid if needed.

  4. How do I prevent the crepes from tearing when folding?

Make sure the pan is well-heated (but not too hot), use a nonstick surface, and cook in thin even layers. Also, slightly warming the crepes before folding helps them stay flexible. Donโ€™t overfill them with the pumpkin yogurt before folding, either.
