Ingredients

Potatoes:

  • 1 tsp Olive Oil
  • 2 tbsp Red Onion (cubed)
  • 1 tbsp Jalapeรฑo (cubed)
  • 100 g Baby Potatoes (cubed)
  • Salt & Pepper
  • ยฝ tsp Smoked Paprika
  • ยฝ tsp Chili Powder
  • ยฝ tsp Garlic Powder
  • ยฝ tsp Cumin
  • Sprinkle of Cayenne
  • 3-4 tbsp Water

Scrambled Eggs:

  • 100 g Large Brown Eggs (Vital Farms)
  • 46 g Egg Whites
  • 27.5 g Low Fat Cottage Cheese (Good Culture)
  • Salt & Pepper

To Top:

  • 1 Veggie Breakfast Sausage (Morningstar Farms)
  • 14 g Fat Free Feta (Athenos)
  • Fresh Cilantro (chopped)

Instructions

Potatoes:

  • Prep your veggies.
    2 tbsp Red Onion, 1 tbsp Jalapeรฑo, 100 g (0.75 cups) Baby Potatoes
  • In a pan, heat up your oil on medium heat. Add in your onion & jalapeรฑos. Sautรฉ for 5-6 minutes until soft.
    1 tsp Olive Oil
  • Add in the cubed potatoes along with all your spices. Mix well.
    Salt & Pepper, 1/2 tsp Smoked Paprika, 1/2 tsp Chili Powder, 1/2 tsp Garlic Powder, 1/2 tsp Cumin, Sprinkle of Cayenne
  • Add in some water and close with a lid. This will help the potatoes soften. Check on it after 2-3 minutes. If still hard, add more water and repeat. They should be soft after a good 5-8 minutes.
    3-4 tbsp Water

Scrambled Eggs:

  • In a bowl, add in all of your ingredients and whisk well.
    100 g (2) Large Brown Eggs, 46 g (3 tbsp) Egg Whites, 27.5 g (2 tbsp) Low Fat Cottage Cheese, Salt & Pepper
  • Pour into the same pan and cook and scramble until nice and fluffy.

To Serve:

  • Cook your sausage in a toaster oven or microwave according to package instructions. Then slice.
    1 Veggie Breakfast Sausage
  • Add your eggs to one side of a bowl and the potatoes on the other.
  • Top with your sausage, feta, and cilantro.
    14 g (1 tbsp) Fat Free Feta, Fresh Cilantro
