Pistachio Microwave Cake

Jump to Recipe Leave a Comment

Soft, Fluffy, Pistachio Perfection

Trust me when I say this pistachio microwave cake is about to become your new favorite high-protein dessert. Light, fluffy, and infused with real pistachio flavor, this single serve pistachio cake is made in a ramekin or mug and ready in under 10 minutesโ€”yes, really. No eggs, no oven, no waiting around. Just pure, nutty goodness packed with over 20g of protein and almost 30g with a scoop of creamy high-protein vanilla ice cream.

Pistachio microwave cake topped with a scoop of whipped cream, drizzled with pistachio spread, and sprinkled with chopped pistachios on a white plate.

Why You’ll Love this Pistachio Microwave Cake

This isnโ€™t your average microwave cake. Weโ€™re talking ultra-soft pistachio mug cake with warm vanilla notes and that signature buttery pistachio flavor in every bite. Itโ€™s everything you want in a pistachio cake, but made microwaveable. And the best part? Itโ€™s cooked in just 45 seconds.

Want to take it over the top? Add a scoop of creamy vanilla high-protein ice cream (just three ingredients!) and drizzle with rich, velvety pistachio butter. I used 100% pistachio butter so itโ€™s got no additives. Then sprinkle some crushed pistachios for that extra crunch. Itโ€™s giving fancy bakery vibesโ€ฆwith none of the effort.

Whether youโ€™re craving a late-night treat or need something sweet after dinner, this microwaveable pistachio cake delivers. Quick, easy, and tastes like dessert meets protein goalโ€”every time.
