Ingredients

Peach:

  • 270 g Yellow Peach (sliced)
  • 3 g Tapioca Flour or Cornstarch (Bobโ€™s Red Mill)
  • 8 g Zero Calorie Brown Sugar (H-E-B)

Pan Prep:

Oat Topping:

  • 20 g Old Fashioned Oats (Bobโ€™s Red Mill)
  • 23 g All-Purpose Flour (King Arthur)
  • 23 g Vanilla Protein Powder (Quest)
  • 3 ml Vanilla Extract (Nielsen Massey)
  • 14 g Cold Unsalted Butter (Vital Farms)
  • 10 ml Fat Free Milk (Whole Foods)

Yogurt:

  • 340 g 0% Milkfat Greek Yogurt (Fage)
  • 3 g Vanilla Bean Paste (Nielsen Massey)

Peach:

    270 g (2) Yellow Peach
  • Add to a bowl and mix with your tapioca flour and sugar until combined.
    3 g (1 tsp) Tapioca Flour or Cornstarch, 8 g (2 tsp) Zero Calorie Brown Sugar

    2 g (0.4 tsp) Cold Unsalted Butter

  • Once your peaches have turned tender, sprinkle your topping in an even layer.
  • Add back to the oven at 350ยฐ for another 8-10 minutes. You can broil it at 500ยฐ at the end for just a minute or two to give the top more of a golden brown color. Be sure to keep an eye on it when baking in general as oven temperatures can vary.
