Peach Crisp Yogurt Parfait
This peach crisp yogurt parfait is the summer refresher you didn’t know you needed. Juicy, golden-baked peaches with a high-protein oat crisp topping, layered between thick, creamy vanilla bean yogurt—basically sunshine in a glass.

Ingredients
Peach:
- 270 g Yellow Peach (sliced)
- 3 g Tapioca Flour or Cornstarch (Bob’s Red Mill)
- 8 g Zero Calorie Brown Sugar (H-E-B)
Pan Prep:
- 2 g Cold Unsalted Butter (Vital Farms)
Oat Topping:
- 20 g Old Fashioned Oats (Bob’s Red Mill)
- 23 g All-Purpose Flour (King Arthur)
- 23 g Vanilla Protein Powder (Quest)
- 3 ml Vanilla Extract (Nielsen Massey)
- 14 g Cold Unsalted Butter (Vital Farms)
- 10 ml Fat Free Milk (Whole Foods)
Yogurt:
- 340 g 0% Milkfat Greek Yogurt (Fage)
- 3 g Vanilla Bean Paste (Nielsen Massey)
Topping:
- 10 ml Sugar Free Syrup (Mrs Butterworths)
Instructions
Peach:
- Start off by washing and prepping your peaches. Remove the pit and slice the flesh.270 g (2) Yellow Peach
- Add to a bowl and mix with your tapioca flour and sugar until combined.3 g (1 tsp) Tapioca Flour or Cornstarch, 8 g (2 tsp) Zero Calorie Brown Sugar
Pan Prep:
- Prep your cast iron skillet or baking dish by rubbing butter along the bottom and edges.2 g (0.4 tsp) Cold Unsalted Butter
- Add the peaches and evenly spread in a flat layer. Bake at 350° for 8-10 minutes so the peaches can soften and start to caramelize.
Oat Topping:
- In a mixing bowl, add in all the dry ingredients and give it a mix. Then add the vanilla and grate in your cold butter. Finally add the milk and give it all a mix until it turns into a crumbly texture.20 g (0.25 cups) Old Fashioned Oats, 23 g (3 tbsp) All-Purpose Flour, 23 g (3) Vanilla Protein Powder, 3 ml (1) Vanilla Extract, 14 g (1 tbsp) Cold Unsalted Butter, 10 ml (2 tsp) Fat Free Milk
- Once your peaches have turned tender, sprinkle your topping in an even layer.
- Add back to the oven at 350° for another 8-10 minutes. You can broil it at 500° at the end for just a minute or two to give the top more of a golden brown color. Be sure to keep an eye on it when baking in general as oven temperatures can vary.
Yogurt:
- While that cooks, add your yogurt and vanilla bean paste to a mixing bowl. Mix together until smooth and creamy.340 g (1.7 cups) 0% Milkfat Greek Yogurt, 3 g (1 tsp) Vanilla Bean Paste
Serve:
- When ready to serve, grab two mason jars and layer each with equal parts yogurt and peach crisp.
Toppings:
- Drizzle on some syrup to both and enjoy!10 ml (2 tsp) Sugar Free Syrup
