Mini Pistachio Cinnamon Ross
Ingredients
Dough:
- 150 g Self Rising Flour (plus 25g for kneading/dusting)
- 50 g Unflavored Protein Powder (Quest)
- ½ tsp Baking Powder
- Pinch of Salt
- 225 g Nonfat Greek Yogurt (Siggi’s)
- 1 tsp Vanilla Extract
Filling:
- 1 tbsp Butter (melted (Earth Balance))
- 2 tbsp Coconut Sugar
- 15 ml Sugar Free Syrup (Ms. Butterworths)
- 20 g Pistachios (finely chopped)
Icing:
- 2 tbsp Powdered Sugar
- 1-2 tbsp Water
Instructions
Dough:
- Add all your ingredients to a large bowl. Start to mix with a spoon and then get in there with your hands.150 g (1.5 cups) Self Rising Flour, 50 g (0.5 cups) Unflavored Protein Powder, 1/2 tsp Baking Powder, Pinch of Salt, 225 g (1 cups) Nonfat Greek Yogurt, 1 tsp Vanilla Extract
- Add to the mixture to a counter with some flour dusted and continue kneading until a dough forms.
- Roll it out into a thin long rectangle.
Filling:
- Melt your butter and spread evenly.1 tbsp Butter
- Sprinkle on your coconut sugar and syrup.2 tbsp Coconut Sugar, 15 ml (1 tbsp) Sugar Free Syrup
- Then top with half your pistachios.20 g (3 tbsp) Pistachios
- Roll your dough longways and then cut into 12 even rolls.
- Add to a baking dish and bake at 350° for 20-25 mins.
Icing:
- Mix your powdered sugar and water together until you get an icing consistency that you like.2 tbsp Powdered Sugar, 1-2 tbsp Water
- Once your rolls have cooked, let them cool before icing and topping with the remaining chopped pistachios.
