Ingredients

Dough:

  • 150 g Self Rising Flour (plus 25g for kneading/dusting)
  • 50 g Unflavored Protein Powder (Quest)
  • ยฝ tsp Baking Powder
  • Pinch of Salt
  • 225 g Nonfat Greek Yogurt (Siggiโ€™s)
  • 1 tsp Vanilla Extract

Filling:

  • 1 tbsp Butter (melted (Earth Balance))
  • 2 tbsp Coconut Sugar
  • 15 ml Sugar Free Syrup (Ms. Butterworths)
  • 20 g Pistachios (finely chopped)

Icing:

  • 2 tbsp Powdered Sugar
  • 1-2 tbsp Water

Instructions

Dough:

  • Add all your ingredients to a large bowl. Start to mix with a spoon and then get in there with your hands.
    150 g (1.5 cups) Self Rising Flour, 50 g (0.5 cups) Unflavored Protein Powder, 1/2 tsp Baking Powder, Pinch of Salt, 225 g (1 cups) Nonfat Greek Yogurt, 1 tsp Vanilla Extract
  • Add to the mixture to a counter with some flour dusted and continue kneading until a dough forms.
  • Roll it out into a thin long rectangle.

Filling:

  • Melt your butter and spread evenly.
    1 tbsp Butter
  • Sprinkle on your coconut sugar and syrup.
    2 tbsp Coconut Sugar, 15 ml (1 tbsp) Sugar Free Syrup
  • Then top with half your pistachios.
    20 g (3 tbsp) Pistachios
  • Roll your dough longways and then cut into 12 even rolls.
  • Add to a baking dish and bake at 350ยฐ for 20-25 mins.

Icing:

  • Mix your powdered sugar and water together until you get an icing consistency that you like.
    2 tbsp Powdered Sugar, 1-2 tbsp Water
  • Once your rolls have cooked, let them cool before icing and topping with the remaining chopped pistachios.
