Ingredients

Wet:

  • 60 g Banana (mashed)
  • 50 g Large Brown Egg (Vital Farms)
  • 56 g Whole Milk Vanilla Bean Yogurt (Wallaby)
  • 60 ml Unsweetened Protein Plant Milk (Good Karma)

Dry:

  • 30 g All-Purpose Flour (King Arthur)
  • 15 g Whey Casein Protein Powder (Naked Protein)
  • 1 tsp Baking Powder
  • Pinch of Salt
  • 1 tsp Cinnamon
  • Pinch of Nutmeg
  • Olive Oil Spray

Toppings:

  • 40 g Banana (slices)
  • 15 g Fat Free Whipped Topping (Reddi)
  • 8 g Crunchy Granola (Purely Elizabeth)
  • 30 ml Sugar Free Syrup (Mrs Butterworths)
  • Powdered Sugar

Instructions

Wet:

  • In a mixing bowl, mash up your banana until smooth. Add in your egg, yogurt, and milk. If using plain yogurt, you can add a splash of vanilla extract. Mix everything well.
    60 g (0.5 cups) Banana, 50 g (1) Large Brown Egg, 56 g (0.25 cups) Whole Milk Vanilla Bean Yogurt, 60 ml (0.25 cups) Unsweetened Protein Plant Milk

Dry:

  • Add in all your dry ingredients straight into the wet. Then mix with a whisk until incorporated. Donโ€™t over mix and itโ€™s okay if the batter is a little lumpy due to the banana.
    30 g (0.25 cups) All-Purpose Flour, 15 g (2) Whey Casein Protein Powder, 1 tsp Baking Powder, Pinch of Salt, 1 tsp Cinnamon, Pinch of Nutmeg
  • Add some oil spray to a mini waffle iron and once heated, pour in about 1/4 cup of batter.
    Olive Oil Spray
  • Close the lid and cook accordingly to the machine. I like to leave mine in there for an extra ~30 seconds to get a crispier exterior.
  • Repeat until all the batter is used up. I made roughly 5 mini waffles.

Toppings:

  • Add slices of bananas, whipped cream, granola, sugar free syrup, and powdered sugar. Then dig in and enjoy!
    40 g (0.25 cups) Banana, 15 g (1 tbsp) Fat Free Whipped Topping, 8 g (0.5 tbsp) Crunchy Granola, 30 ml (2 tbsp) Sugar Free Syrup, Powdered Sugar
