Wet:
In a mixing bowl, mash up your banana until smooth. Add in your egg, yogurt, and milk. If using plain yogurt, you can add a splash of vanilla extract. Mix everything well.
60 g(0.5cups) Banana, 50 g(1) Large Brown Egg, 56 g(0.25cups) Whole Milk Vanilla Bean Yogurt, 60 ml(0.25cups) Unsweetened Protein Plant Milk
Dry:
Add in all your dry ingredients straight into the wet. Then mix with a whisk until incorporated. Don’t over mix and it’s okay if the batter is a little lumpy due to the banana.
30 g(0.25cups) All-Purpose Flour, 15 g(2) Whey Casein Protein Powder, 1 tsp Baking Powder, Pinch of Salt, 1 tsp Cinnamon, Pinch of Nutmeg
Add some oil spray to a mini waffle iron and once heated, pour in about 1/4 cup of batter.
Olive Oil Spray
Close the lid and cook accordingly to the machine. I like to leave mine in there for an extra ~30 seconds to get a crispier exterior.
Repeat until all the batter is used up. I made roughly 5 mini waffles.
Toppings:
Add slices of bananas, whipped cream, granola, sugar free syrup, and powdered sugar. Then dig in and enjoy!
