  • 42 g Unsalted Butter (browned (Vital Farms))
  • 2 Large Brown Eggs (Vital Farms)
  • 170 g 0% Milkfat Yogurt (Fage)
  • 1 tsp Vanilla Extract
  • 250 g Ripe Banana (mashed)

Dry:

  • 60 g All-Purpose Flour (King Arthur)
  • 30 g Wheat Gluten or AP Flour (Anthonyโ€™s)
  • 47 g Vanilla Protein Powder (Quest)
  • 1 tsp Baking Powder
  • ยฝ tsp Baking Soda
  • 1 tsp Salt

Mix-Ins:

Instructions

Wet:

  • Start by browning your butter. Heat a small saucepan on low to medium heat and add in your butter. Slowly cook it and constantly whisk until the melted butter starts to turn a golden brown color. Should take about 5-8 minutes.
    42 g (3 tbsp) Unsalted Butter
  • Once brown, remove from heat and pour into your mixing bowl to cool off.
  • Add in your eggs and whisk together. Then add the yogurt and vanilla. Whisk until smooth.
    2 Large Brown Eggs, 170 g (0.75 cups) 0% Milkfat Yogurt, 1 tsp Vanilla Extract
  • In a separate bowl, mash your bananas until smooth but still lumpy. Pour that into your wet ingredients mixture. Mix everything together now until incorporated.
    250 g (1.66 cups) Ripe Banana

Dry:

  • Add in all of your dry ingredients (besides the chopped pistachios) right on top. Mix again until there are no dry patches of flour but do not over mix. Just enough.
    60 g (0.5 cups) All-Purpose Flour, 30 g (2 tbsp) Wheat Gluten or AP Flour, 47 g (0.5 cups) Vanilla Protein Powder, 1 tsp Baking Powder, 1/2 tsp Baking Soda, 1 tsp Salt
  • Add in the chopped pistachios and give one more quick mix. Set aside.
    21 g (3 tbsp) Cinnamon Pistachios
  • Grab your bread baking tin and spray with oil. Crush up your parchment paper and place it inside.
  • Pour in half of your banana bread batter. Then evenly drizzle half your pistachio paste. Use a toothpick or chopstick to swirl it into your batter.
    41 g (6 tbsp) Pure Pistachio Paste
  • Add the rest of your batter and repeat with the second serving of pistachio butter. Swirl it in as well.
  • Bake at 350ยฐ for 45-50 minutes. Everyoneโ€™s oven will vary so check with a toothpick to ensure it comes out clean and is ready. Let it cool for a solid 30 minutes before frosting.

Pistachio Yogurt Frosting:

  • In a small mixing bowl, add in your frosting ingredients and mix together to get a thick and creamy consistency. Set aside.
    113 g (0.5 cups) 0% Milkfat Yogurt, 30 ml (2 tbsp) Nonfat Milk, 7 g (1 tbsp) Pure Pistachio Paste, 4 g (1 tsp) Pistachio Sugar Free Instant Pudding Mix

To Top:

  • Once your bread has cool, spread your yogurt frosting evenly on top and sprinkle with the remaining chopped pistachios.
    7 g (1 tbsp) Cinnamon Pistachios
  • Cut into 10 even slices and store in an airtight container fo enjoy through the week.
