Ingredients

Tofu:

  • 170 g Extra Firm Tofu (Hodo Foods)
  • Olive Oil Spray
  • 2 tsp Spicy Taco Seasoning (Siete)
  • 1 tbsp Low Sodium Soy Sauce (Sprouts)

Yogurt Sauce:

  • 28 g Nonfat Greek Yogurt (Siggiโ€™s)
  • 1 tsp Hot Sauce (Tapatio)
  • 1-2 tsp Water

Taco:

  • 2 Thin Corn Tortillas (Mi Rancho)
  • Red Onion (chopped)
  • Fresh Cilantro
  • Spicy Salsa (Arriba!)
  • Lime Juice

Instructions

Tofu:

  • Use a grater to grate your tofu into a bowl.
    170 g (0.75 cups) Extra Firm Tofu
  • Then spray a pan with olive oil and heat on medium. Add your tofu once hot and sautรฉ for a minute or two.
    Olive Oil Spray
  • Add in your taco seasoning and soy sauce to give it that nice color and flavor. Let it simmer and cook slowly for 5-6 minutes.
    2 tsp Spicy Taco Seasoning, 1 tbsp Low Sodium Soy Sauce

Yogurt Sauce:

  • Mix together your yogurt, hot sauce, and some water. Add more or less water to get desired consistency.
    28 g (2 tbsp) Nonfat Greek Yogurt, 1 tsp Hot Sauce, 1-2 tsp Water

To Serve:

  • Once your tofu has cooked, set aside and warm your tortillas on the stove.
    2 Thin Corn Tortillas
  • Top your tortillas with the tofu, chopped onion, cilantro, your yogurt sauce, some spicy salsa, and fresh lime juice.
    Red Onion, Fresh Cilantro, Spicy Salsa, Lime Juice
