Grated Tofu Tacos
Ingredients
Tofu:
- 170 g Extra Firm Tofu (Hodo Foods)
- Olive Oil Spray
- 2 tsp Spicy Taco Seasoning (Siete)
- 1 tbsp Low Sodium Soy Sauce (Sprouts)
Yogurt Sauce:
- 28 g Nonfat Greek Yogurt (Siggi’s)
- 1 tsp Hot Sauce (Tapatio)
- 1-2 tsp Water
Taco:
- 2 Thin Corn Tortillas (Mi Rancho)
- Red Onion (chopped)
- Fresh Cilantro
- Spicy Salsa (Arriba!)
- Lime Juice
Instructions
Tofu:
- Use a grater to grate your tofu into a bowl.170 g (0.75 cups) Extra Firm Tofu
- Then spray a pan with olive oil and heat on medium. Add your tofu once hot and sauté for a minute or two.Olive Oil Spray
- Add in your taco seasoning and soy sauce to give it that nice color and flavor. Let it simmer and cook slowly for 5-6 minutes.2 tsp Spicy Taco Seasoning, 1 tbsp Low Sodium Soy Sauce
Yogurt Sauce:
- Mix together your yogurt, hot sauce, and some water. Add more or less water to get desired consistency.28 g (2 tbsp) Nonfat Greek Yogurt, 1 tsp Hot Sauce, 1-2 tsp Water
To Serve:
- Once your tofu has cooked, set aside and warm your tortillas on the stove.2 Thin Corn Tortillas
