Nov. 11, 2025

Jump to Recipe Jump to Video Tutorial

Creamy, Fudgy, Crunchy Bliss!

These Frozen Pumpkin S’mores Bars are the kind of treat you’ll have to physically stop yourself from devouring. Think classic campfire s’mores—but dressed up for fall, protein-packed, and living their best frozen dessert life. Creamy, fudgy, and melt-in-your-mouth perfection with that satisfying graham cracker crunch in every bite.

Six frozen pumpkin s’mores bars made with layers of graham crackers, creamy pumpkin filling, and chocolate, sprinkled with flaky sea salt and served on a wooden board with a cozy orange kitchen towel in the background.

Each bite is a textural dream—layers of rich pumpkin chocolate fudge topped with a fluffy, marshmallow-style filling made from Greek yogurt, cool whip, protein powder, pumpkin purée, and cozy fall spices. It’s the best of both worlds: dessert decadence meets balanced indulgence, because yes, each bar packs 7 grams of protein. That’s what we call delicious logic.

Whether you’re craving something sweet after dinner or need a mid-afternoon pick-me-up, these no bake pumpkin s’mores are pure fall comfort. They’re easy to prep, store beautifully in the freezer, and are always ready when your sweet tooth strikes. One bite and you’ll get it—pumpkin s’mores bars might just become your new seasonal obsession.

Perfectly creamy, crunchy, and cool, these frozen s’mores with pumpkin are everything you didn’t know you needed. And trust me, resisting a second (or third) one is nearly impossible.

Key Ingredients for these Frozen Pumpkin S’mores Bars

To create these irresistible Frozen Pumpkin S’mores Bars, you’ll only need a few simple ingredients—but each one plays a key role in building that dreamy, creamy, and crunchy texture combo. From the smooth pumpkin chocolate base to the fluffy marshmallow layer, here’s a closer look at what makes these pumpkin s’mores bars so special.

  • Sea Salt Dark Chocolate: The rich, deep flavor of dark chocolate forms the fudgy foundation of these bars. Its slight bitterness balances beautifully with the sweetness of the marshmallow whip and the warm fall spices.
  • Pumpkin Puree: The star of the show! Pumpkin adds a velvety texture and a touch of earthy sweetness to both the chocolate base and the marshmallow layer, bringing all those cozy fall vibes.
  • Graham Crackers: A must for any s’mores-inspired recipe. They add that nostalgic, crunchy layer that perfectly contrasts the creamy fillings while holding everything together.
  • Reduced Fat Whipped Topping: This is what gives the marshmallow layer its signature airy and fluffy texture. It creates that light, cloud-like bite reminiscent of melted marshmallows—but without the stickiness.
  • Greek Yogurt: Adds creaminess, protein, and a tangy balance to the sweet flavors, making these frozen s’mores feel rich yet refreshing.
  • Unflavored Protein Powder: A sneaky way to boost protein while keeping the texture thick and luscious. It blends seamlessly into the marshmallow whip for a dessert that’s indulgent and balanced.
  • Pumpkin Pie Spice: The perfect blend of cinnamon, nutmeg, ginger, and cloves adds warmth and depth to the flavor profile—because what’s a fall dessert without it?

Together, these ingredients create frozen pumpkin s’mores bars that are creamy, fudgy, and totally irresistible—everything you want in a no bake fall treat.

Substitution Options

Whether you’re adjusting for dietary needs, personal taste, or just what’s in your pantry, these frozen pumpkin s’mores bars are flexible enough to adapt. Here are some simple swaps that still deliver the same creamy, fudgy, and crunchy magic.

  • Chocolate: Any dark or semi-sweet chocolate will work in place of sea salt dark chocolate. You can also use sugar-free or dairy-free options for a lighter or vegan-friendly twist.
  • Pumpkin Puree: If you’re out of pumpkin, try using sweet potato puree or butternut squash puree for a similar creamy consistency and natural sweetness.
  • Graham Crackers: Substitute with gluten-free graham crackers or even biscoff cookies for a fun, spiced variation on the classic s’mores flavor.
  • Whipped Topping: Use coconut whipped cream or a dairy-free version if you prefer a plant-based alternative—it’ll still give that fluffy, marshmallow-like finish.
  • Greek Yogurt: Regular yogurt, skyr, or a dairy-free protein yogurt can be used instead. Just keep an eye on the texture; thicker yogurts work best for that signature creamy layer.
  • Protein Powder: Swap with a vanilla-flavored protein powder for extra sweetness, or leave it out entirely if you want a lighter dessert.

The beauty of these pumpkin s’mores bars lies in their flexibility. Whether you make them dairy-free, gluten-free, or lower in sugar, they’ll still deliver that nostalgic frozen s’mores flavor with a fall twist.

**If there is a sub I haven’t mentioned above, it’s because I have not tested it and can’t speak for how well it would work for this recipe.

Equipment and Tools

No fancy gadgets are required for this recipe—just a few kitchen basics to make layering and mixing a breeze. The beauty of these frozen pumpkin s’mores bars is that they’re simple to prepare yet look and taste like a gourmet treat.

  • Microwave-Safe Bowl: Ideal for melting the chocolate smoothly without burning.
  • Mixing Bowl: Needed for whipping together the marshmallow filling until perfectly creamy and fluffy.
  • Spatula: Helps spread each layer evenly and ensures no delicious filling goes to waste.
  • Small Rectangular Dish: The perfect size for assembling and freezing your layered pumpkin s’mores bars.
  • Parchment Paper: Prevents sticking and makes removing and slicing the bars super easy.
  • Measuring Scale: Ensures your ingredient ratios are accurate for consistent flavor and texture.
  • Sharp Knife: Essential for cutting clean, even slices once the bars are fully frozen.

That’s it—no oven, no blender, no stress. Just creamy layers of pumpkin, chocolate, and graham cracker goodness coming together for the ultimate frozen s’mores experience.

How to Make Your Frozen Pumpkin S’mores Bars

These no bake pumpkin s’mores bars are as easy to make as they are to devour. With just a few layers and some chill time in the freezer, you’ll have a decadent frozen dessert that’s creamy, crunchy, and perfect for fall.

Make the Pumpkin Chocolate Layer

Start by adding your chopped chocolate pieces to a small bowl. Microwave for about 30–45 seconds until melted and smooth. Stir in the pumpkin puree until completely combined to create a rich pumpkin chocolate fudge layer.

Assemble the Base

Line a small rectangular dish with parchment paper. Arrange three sheets of graham crackers along the bottom, breaking them in half if needed to fit snugly.

Pour the pumpkin chocolate over the crackers and spread evenly to cover the entire surface. Place in the fridge to set while you prepare the next layer.

Prepare the Marshmallow Whip

In a large mixing bowl, add the whipped topping, Greek yogurt, pumpkin puree, protein powder, and pumpkin pie spice. Mix until smooth and evenly combined.

Remove your dish from the fridge and spread the marshmallow whip over the chocolate layer, smoothing it out to an even finish.

Add the Final Layer

Top with the remaining graham cracker halves, pressing down gently so they stick to the filling. Place the dish in the freezer and let it set for at least 4 hours, or until firm.

Serve and Enjoy

Once set, sprinkle with a touch of sea salt for contrast, slice into bars using a sharp knife, and enjoy straight from the freezer. Each bite of these no bake pumpkin s’mores is creamy, fudgy, and crunchy—basically the perfect frozen fall dessert.

Tips and Tricks

Here are some helpful tips to make your Frozen Pumpkin S’mores Bars turn out perfectly every time. From achieving the best texture to storing them for later, these tricks will help you nail that creamy, fudgy, and crunchy balance every single time.

  • Use Quality Chocolate: A good sea salt dark chocolate makes all the difference here. It provides that rich fudgy base that contrasts beautifully with the light marshmallow layer.
  • Smooth Pumpkin Puree: Make sure your pumpkin purée is well-blended and not watery—this keeps your pumpkin s’mores bars creamy instead of icy once frozen.
  • Don’t Skip the Chill Time: Let the bars set in the freezer for at least four hours (overnight is even better). This ensures the layers are firm and easy to slice.
  • Line Your Dish Properly: Parchment paper makes it much easier to remove the bars cleanly once frozen—no sticking, no mess.
  • Layer Evenly: Spread both the pumpkin chocolate and marshmallow whip evenly so each bite has the perfect balance of creamy, fudgy, and crunchy textures.
  • Slice with a Warm Knife: Run your knife under warm water before cutting for clean, even slices through the frozen layers.

With these easy tricks, your no bake pumpkin s’mores will look picture-perfect and taste even better—just the way a fall dessert should.

Storage Instructions

Keep your Frozen Pumpkin S’mores Bars tasting as fresh and delicious as the day you made them with these simple storage tips. Because these no bake pumpkin s’mores are frozen, they’re incredibly easy to store and enjoy later.

  • Freezer Storage: Once fully set, store the bars in an airtight container or freezer-safe bag. Separate each layer with parchment paper to prevent sticking.
  • Serving from Frozen: Let them sit at room temperature for 5–10 minutes before serving for the perfect creamy texture that still holds its shape.
  • Easy Refreezing: Once thawed, you can still easily refreeze for another day and it will keep its texture.
  • Single-Serve Option: Slice into individual portions before freezing—perfect for an easy grab-and-go dessert when cravings hit.

By following these tips, you’ll keep your pumpkin s’mores bars creamy, fudgy, and full of that irresistible graham cracker crunch, even days later.

FAQs

Here are some of the most common questions about making these Frozen Pumpkin S’mores Bars so you can master them with confidence.

  1. Can I make these pumpkin s’mores bars dairy-free?

Yes! Simply use dairy-free whipped topping, plant-based Greek yogurt, and your favorite vegan dark chocolate. The flavor and texture stay creamy and indulgent while being completely dairy-free.

  2. How long do the frozen s’mores bars last in the freezer?

They’ll stay fresh for up to 2–3 weeks if stored in an airtight container. Just make sure they’re sealed tightly to avoid freezer burn or absorbing other flavors from the freezer.

  3. Do I need to use protein powder?

Not at all! While the protein powder adds a boost and helps with the structure of the marshmallow whip, you can omit it or substitute with a small amount of oat flour or additional Greek yogurt for a similar texture.

  4. Can I make these no bake pumpkin s’mores ahead of time?

Absolutely! These bars are perfect for meal prep or parties. Just prepare and freeze them the day before serving—they’ll be set, firm, and easy to slice right when you need them.
