Ingredients

Egg:

  • 50 g Large Brown Egg (Vital Farms)
  • 46 g Egg Whites (H-E-B)
  • ยผ cup Kale (chopped)
  • Olive Oil Spray

Bread:

  • 85 g Ciabatta Roll (Trader Joeโ€™s)
  • 14 g Shredded Fat Free Mozzarella Cheese (H-E-B)
  • ยผ tsp Onion Powder

Sandwich:

  • 21 g Reduced Fat Swiss Cheese Slice (Jalsberg)
  • 15 g Pesto Alla Genovese (Central Market)

Instructions

Eggs:

  • In a small pan, spray with oil and add your chopped kale. Sautรฉ on medium heat until softened (1-2 minutes)
    Olive Oil Spray, 1/4 cup Kale
  • Add in your whisked eggs and cook until set. Fold in the edges to create a square shape or cut them off to layer later.
    50 g (3.5 tbsp) Large Brown Egg, 46 g (3 tbsp) Egg Whites

Bread:

  • Sprinkle some mozzarella to the tops of both sides of your ciabatta roll and add onion powder.
    85 g (3 oz) Ciabatta Roll, 14 g (1 tbsp) Shredded Fat Free Mozzarella Cheese, 1/4 tsp Onion Powder
  • Toast in a toaster oven or air fryer until nice and crispy.

Sandwich:

  • Build your sandwich! Top your bottom roll with your egg slice, Swiss cheese, and basil pesto.
    21 g (0.75 oz) Reduced Fat Swiss Cheese Slice, 15 g (1 tbsp) Pesto Alla Genovese
  • Add the top roll and slice in half. Enjoy!
