Ingredients
Egg:
- 50 g Large Brown Egg (Vital Farms)
- 46 g Egg Whites (H-E-B)
- ¼ cup Kale (chopped)
- Olive Oil Spray
Bread:
- 85 g Ciabatta Roll (Trader Joe’s)
- 14 g Shredded Fat Free Mozzarella Cheese (H-E-B)
- ¼ tsp Onion Powder
Sandwich:
- 21 g Reduced Fat Swiss Cheese Slice (Jalsberg)
- 15 g Pesto Alla Genovese (Central Market)
Instructions
Eggs:
- In a small pan, spray with oil and add your chopped kale. Sauté on medium heat until softened (1-2 minutes)Olive Oil Spray, 1/4 cup Kale
- Add in your whisked eggs and cook until set. Fold in the edges to create a square shape or cut them off to layer later.50 g (3.5 tbsp) Large Brown Egg, 46 g (3 tbsp) Egg Whites
Bread:
- Sprinkle some mozzarella to the tops of both sides of your ciabatta roll and add onion powder.85 g (3 oz) Ciabatta Roll, 14 g (1 tbsp) Shredded Fat Free Mozzarella Cheese, 1/4 tsp Onion Powder
- Toast in a toaster oven or air fryer until nice and crispy.
Sandwich:
