Egg Croissant Sandwich and Yogurt
Ingredients
Croissant Sandwich:
- 1 Mini Butter Croissant (H-E-B)
- Olive Oil Spray
- 1 Large Egg (Vital Farms)
- 46 g Egg Whites
- 27.5 g Low Fat Cottage Cheese (Good Culture)
- 15 g Fresh Spinach
- Salt & Pepper
- 5 g Fat Free Mozzarella Cheese (H-E-B)
Yogurt:
- 113 g Nonfat Plain Greek Yogurt (Siggi’s)
- ½ tsp Vanilla Extract
- 15 ml Sugar Free Syrup (Mrs Buttersworth)
- 1-2 Fresh Strawberries (cubed)
- 1 Fresh Kiwi (cubed)
- 8 g Chocolate Chip Cookie Granola (Purely Elizabeth)
Instructions
Croissant Sandwich:
- Heat up a medium pan and spray with olive oil.Olive Oil Spray
- While that heats, in a bowl whisk together your egg, egg whites, cottage cheese, and salt & pepper.1 Large Egg, 46 g (3 tbsp) Egg Whites, 27.5 g (2 tbsp) Low Fat Cottage Cheese, Salt & Pepper
- Add to your pan and top with spinach. Start to let it cook and mix to scramble together. Set aside.15 g (1 tbsp) Fresh Spinach
- Cut your croissant in half and toast in your oven or toaster.1 Mini Butter Croissant
- To assemble, add your eggs to your base croissant and sprinkle on your cheese. Then close and enjoy.5 g (1 tsp) Fat Free Mozzarella Cheese
Yogurt:
- In a bowl, mix together your yogurt, vanilla, and maple syrup until smooth.113 g (0.5 cups) Nonfat Plain Greek Yogurt, 1/2 tsp Vanilla Extract, 15 ml (1 tbsp) Sugar Free Syrup
