Cottage Cheese Mashed Potatoes
Ingredients
- 400 g Russet Potato (cubed)
- 220 g Low Fat Cottage Cheese (Good Culture)
- 1 clove Garlic
- 7 g Nutritional Yeast (Bobs Red Mill)
- 45 ml Protein Plant Milk (Good Karma)
- Salt & Pepper
- Green Onion (sliced)
Instructions
- Cube your potato and add to a pot with cold water. I didn’t peel mine because I’m lazy but you can definitely do so.400 g (2.67 cups) Russet Potato
- Season with salt and then boil for 8-10 minutes until fork tender.
- Meanwhile, add your cottage cheese, garlic, nutritional yeast for that buttery flavor, and milk to a blender. Blend until really smooth.220 g (1 cups) Low Fat Cottage Cheese, 1 clove Garlic, 7 g (1 tbsp) Nutritional Yeast, 45 ml (3 tbsp) Protein Plant Milk
- Strain your potatoes and add to a large bowl. Use a masher to mash the potatoes. Then add in your cottage cheese mixture.
- Mix everything really well. Season with salt & pepper to taste.Salt & Pepper
