Cottage Cheese Flatbread Pizza
Ingredients
Flatbread:
- 110 g Low Fat Cottage Cheese (Good Culture)
- 1 Large Brown Egg (Vital Farms)
- 7.5 g Grated Parmesan Cheese
- ¼ tsp Garlic Powder
- ¼ tsp Dried Basil
- Olive Oil Spray
Toppings:
- 59 g Garlic Pasta Sauce (Central Market)
- 28 g Fat Free Mozzarella (H-E-B)
- Handful of Arugala
- 7 g Sugar Free Syrup (Mrs Butterworths)
- Crushed Red Pepper
Instructions
Flatbread:
- Add all your ingredients but the olive oil to a blender.110 g (0.5 cups) Low Fat Cottage Cheese, 1 Large Brown Egg, 7.5 g (1 tbsp) Grated Parmesan Cheese, 1/4 tsp Garlic Powder, 1/4 tsp Dried Basil
- Blend for just a few seconds until all is incorporated. This keeps it from getting too airy.
- Grab a round baking sheet and spray the bottom with oil. I used an 8” pie baking sheet. Add parchment paper on top. This will keep it from moving around as you spread your liquid.Olive Oil Spray
- Spray with oil once more and spread and wipe excess with a paper towel. This will ensure your flatbread peels off cleanly.
- Pour out the batter and spread into a rough circular shape.
- Bake at 350° for 18-20 minutes. Cook times will vary based on your oven so keep an eye on it.
- Let it cool completely for a good 10-15 minutes! Don’t try to peel it off before that otherwise it may fall apart.
Pizza:
- I removed the flatbread from the baking sheet and added it to a plate or cutting board.
- I spread on some pasta sauce and cheese for my pizza but feel free to add any toppings you like.59 g (0.25 cups) Garlic Pasta Sauce, 28 g (2 tbsp) Fat Free Mozzarella
- Carefully slide onto the racks in your oven or baking in another baking sheet. I wanted the base to get crispy.
- Bake at 350° for 8-10 minutes.
To Serve:

- Slice into 4ths and enjoy!
