Cinnamon Swirl Apple Pie Pancakes
Ingredients
Spiced Apples:
- 120 g Apple (Apple, cubed)
- 30 ml Sugar Free Syrup (Mrs Butterworths)
- ½ tsp Cinnamon
Pancakes:
- 60 g Protein Pancake Mix (Birch Benders)
- 60 ml Unsweetened Plant Protein Milk (Good Karma)
- 1 Large Brown Eggs (Vital Farms)
Cinnamon Swirl:
- 30 ml Sugar Free Syrup (Mrs Butterworths)
- 1 tsp Cinnamon
Yogurt Whip:
- 85 g Plain NonFat Greek Yogurt (Siggi’s)
- 15 ml Sugar Free Syrup (Mrs Butterworths)
- Pinch of Cinnamon
Toppings:
- 15 ml Sugar Free Syrup (Mrs Butterworths)
Instructions
Spiced Apples:
- In a small pot, add in your apples, syrup, and cinnamon. Cook for a good 10-12 minutes until soft.120 g (1 cups) Apple, 30 ml (2 tbsp) Sugar Free Syrup, 1/2 tsp Cinnamon
Pancakes:
- In a bowl, mix together your protein mix, milk, and egg. Make sure there are no lumps.60 g (0.5 cups) Protein Pancake Mix, 60 ml (0.25 cups) Unsweetened Plant Protein Milk, 1 Large Brown Eggs
- Add in about half of the apples and mix into the batter.
Cinnamon Swirl:
- In a small bowl, mix together the cinnamon swirl ingredients.30 ml (2 tbsp) Sugar Free Syrup, 1 tsp Cinnamon
- Add to a zip lock and snip a small corner.
- Spray a pan with coconut oil and scoop out 1/4 cup of batter.
- Add a swirl to the middle and flip once the side gets small bubbles. Repeat for remaining batter.
Yogurt Whip:
- Add your yogurt to a small bowl and mix with your syrup and cinnamon until smooth.85 g (0.33 cups) Plain NonFat Greek Yogurt, 15 ml (1 tbsp) Sugar Free Syrup, Pinch of Cinnamon
- Stack your pancakes and top with the yogurt and remaining spiced apples. Drizzle on some more syrup!15 ml (1 tbsp) Sugar Free Syrup
