Chocolate Covered Frozen Yogurt Bites
Ingredients
Yogurt Base:
- 226 g Nonfat Greek Yogurt (Siggi’s)
- 15 g Vanilla Protein Powder (Optimum Nutrition)
- 13 g Powdered Peanut Butter (PB2)
- 1 tsp Vanilla Extract
- 30 ml Sugar Free Syrup (Mrs. Butterworths)
Peanuts:
- 36 g Peanuts (raw)
Chocolate Shell:
- 80 g Sea Salt Extra Dark Chocolate (Gatsby’s)
- ½ tsp Coconut Oil
- Flaky Sea Salt
Instructions
Yogurt Base:
- In a bowl, add in your base ingredients and mix until thick and creamy. Ensure there are no lumps.226 g (1 cups) Nonfat Greek Yogurt, 15 g (0.25 cups) Vanilla Protein Powder, 13 g (2 tbsp) Powdered Peanut Butter, 1 tsp Vanilla Extract, 30 ml (2 tbsp) Sugar Free Syrup
- Grab an ice cream scooper and scoop out equal portions and place onto a parchment lined baking sheet. It should make roughly 6.
- Top each with equal amounts (6g) of your peanuts.36 g (0.25 cups) Peanuts
- Then freeze for at least an hour.
Chocolate Shell:
- When ready, add your chocolate and coconut oil to a bowl.80 g (2.75 oz) Sea Salt Extra Dark Chocolate, 1/2 tsp Coconut Oil
- Microwave for 30-60 seconds at 15 second increments. You want to ensure you don’t burn the chocolate but just slowly melt it.
- Once your yogurt bites are frozen, top each with roughly 2 tsp scoops of chocolate. Spread it so it covers the tops. You can also do double the chocolate and dunk each to coat fully.
- Finally, finish them off with some flaky sea salt for the perfect sweet and salty combo.Flaky Sea Salt
- Keep frozen for up to a week and allow them to defrost at least 10-15 mins before enjoying otherwise they may be too icy!
