Ingredients

Waffle:

  • 50 g Large Brown Egg (Vital Farms)
  • 30 ml Nonfat Milk (Whole Foods)
  • 75 g 0% Milkfat Yogurt (Fage)
  • 5 ml Vanilla Extract (Nielsen Massey)
  • 20 g All Purpose Flour (King Arthur)
  • 15 g Vanilla Protein Powder
  • ยฝ tsp Baking Powder
  • Pinch Salt
  • ยฝ tsp Cinnamon
  • ยผ tsp Nutmeg

Cherry Compote:

  • 35 g Frozen Cherries
  • 3 g Tapioca Flour (Bobs Red Mill)
  • ยฝ tbsp Water

Yogurt Whip:

  • 75 g 0% Milkfat Yogurt (Fage)
  • 5 ml Vanilla Extract (Nielsen Massey)
  • 1 tbsp Cherry Compote

Toppings:

  • 15 ml Sugar Free Syrup
  • Powdered Sugar

Instructions

Waffle:

  • In a large mixing bowl, add in all the ingredients and whisk until smooth and no lumps remain.
    50 g (1 whole) Large Brown Egg, 30 ml (2 tbsp) Nonfat Milk, 75 g (0.33 cup) 0% Milkfat Yogurt, 5 ml (1 tsp) Vanilla Extract, 20 g (3 tbsp) All Purpose Flour, 15 g (0.5 scoop) Vanilla Protein Powder, 1/2 tsp Baking Powder, Pinch Salt, 1/2 tsp Cinnamon, 1/4 tsp Nutmeg
  • Spray your waffle iron lightly with olive oil and cook according to appliance instructions.

Cherry Compote:

  • Meanwhile, add your cherries, tapioca, and water to a bowl. Heat for 1-2 minutes, stopping in between to mash with a fork. You should end up with a thick jam consistency.
    35 g (0.25 cup) Frozen Cherries, 3 g (1 tsp) Tapioca Flour, 1/2 tbsp Water

Yogurt Whip:

  • In another bowl, add your yogurt, vanilla, and a little bit of the compote. Mix together.
    75 g (0.33 cup) 0% Milkfat Yogurt, 5 ml (1 tsp) Vanilla Extract, 1 tbsp Cherry Compote

Toppings:

  • Layer your yogurt and cherry compote to one half of your waffle and then fold in half like a sandwich.
  • Drizzle with syrup and sprinkle powdered sugar.
    15 ml Sugar Free Syrup, Powdered Sugar
