Ingredients

Wet:

  • 52 g Large Brown Egg (Vital Farms)
  • 30 ml Low Fat Buttermilk (Whole Foods)
  • 7 g Light Flaxseed Oil Butter (Smart Balance)
  • 1 tsp Vanilla Extract
  • 75 g Nonfat Greek Yogurt (Siggiโ€™s)

Dry:

  • 30 g All Purpose Flour (King Arthur)
  • 15 g Unflavored Whey Protein Isolate (Isopure)
  • 8 g Zero Calorie Sweetener (H-E-B)
  • 1 tsp Baking Powder
  • ยฝ tsp Baking Soda
  • Pinch of Salt
  • ยฝ tsp Cinnamon
  • ยฝ tsp Ginger
  • ยผ tsp Nutmeg

To Cook:

  • 7 g Light Flaxseed Oil Butter (Smart Balance)

To Top:

  • 8 g Walnuts (chopped)
  • 30 ml Sugar Free Syrup (Mrs Butterworths)

Instructions

  • Wet:
  • Add your egg to a mixing bowl and whisk to add some air and fluff.
    52 g (3.5 tbsp) Large Brown Egg
  • Then add in the remaining ingredients and mix until smooth.
    30 ml (2 tbsp) Low Fat Buttermilk, 7 g (0.5 tbsp) Light Flaxseed Oil Butter, 1 tsp Vanilla Extract, 75 g (0.33 cups) Nonfat Greek Yogurt
  • Dry:
  • Then add in the dry ingredients and mix until you have a smooth batter.
    30 g (0.25 cups) All Purpose Flour, 15 g (2 tbsp) Unflavored Whey Protein Isolate, 8 g (2 tsp) Zero Calorie Sweetener, 1 tsp Baking Powder, 1/2 tsp Baking Soda, Pinch of Salt, 1/2 tsp Cinnamon, 1/2 tsp Ginger, 1/4 tsp Nutmeg
  • In a pan on medium heat, add in a little bit of your butter. Scoop out 1/4th cup of your batter and cook until golden brown on each side. Repeat until batter is used up.
    7 g (0.5 tbsp) Light Flaxseed Oil Butter
  • To Top:
  • Top your cooked pancakes with some walnuts and sugar free syrup. Then enjoy!
    8 g (1 tbsp) Walnuts, 30 ml (2 tbsp) Sugar Free Syrup
