Ingredients
Wet:
- 52 g Large Brown Egg (Vital Farms)
- 30 ml Low Fat Buttermilk (Whole Foods)
- 7 g Light Flaxseed Oil Butter (Smart Balance)
- 1 tsp Vanilla Extract
- 75 g Nonfat Greek Yogurt (Siggi’s)
Dry:
- 30 g All Purpose Flour (King Arthur)
- 15 g Unflavored Whey Protein Isolate (Isopure)
- 8 g Zero Calorie Sweetener (H-E-B)
- 1 tsp Baking Powder
- ½ tsp Baking Soda
- Pinch of Salt
- ½ tsp Cinnamon
- ½ tsp Ginger
- ¼ tsp Nutmeg
To Cook:
- 7 g Light Flaxseed Oil Butter (Smart Balance)
To Top:
- 8 g Walnuts (chopped)
- 30 ml Sugar Free Syrup (Mrs Butterworths)
Instructions
- Wet:
- Add your egg to a mixing bowl and whisk to add some air and fluff.52 g (3.5 tbsp) Large Brown Egg
- Then add in the remaining ingredients and mix until smooth.30 ml (2 tbsp) Low Fat Buttermilk, 7 g (0.5 tbsp) Light Flaxseed Oil Butter, 1 tsp Vanilla Extract, 75 g (0.33 cups) Nonfat Greek Yogurt
- Dry:
- Then add in the dry ingredients and mix until you have a smooth batter.30 g (0.25 cups) All Purpose Flour, 15 g (2 tbsp) Unflavored Whey Protein Isolate, 8 g (2 tsp) Zero Calorie Sweetener, 1 tsp Baking Powder, 1/2 tsp Baking Soda, Pinch of Salt, 1/2 tsp Cinnamon, 1/2 tsp Ginger, 1/4 tsp Nutmeg
- In a pan on medium heat, add in a little bit of your butter. Scoop out 1/4th cup of your batter and cook until golden brown on each side. Repeat until batter is used up.7 g (0.5 tbsp) Light Flaxseed Oil Butter
