Ingredients

Wet:

  • 1 Whole Brown Egg (Vital Farms)
  • 85 g Nonfat Greek Yogurt (Siggiโ€™s)
  • 30 ml Unflavored Plant Milk (Good Karma)
  • 15 ml Sugar Free Syrup (Mrs Butterworths)
  • Splash of Vanilla Extract

Dry:

  • 30 g All Purpose Flour (King Arthur)
  • 15 g Unflavored Protein Powder (Quest Baking)
  • Pinch of Salt
  • ยฝ tsp Cinnamon
  • ยฝ tsp Baking Powder
  • Coconut Oil (spray)

Toppings:

  • 90 g Yellow Peach (sliced)
  • 5 g Powdered Sugar (Whole Foods)
  • 15 g Sugar Free Syrup (Mrs Butterworths)
  • 5 g Sliced Almonds

Instructions

Waffle:

  • In a bowl, mix together your wet ingredients until smooth.
    1 Whole Brown Egg, 85 g (0.33 cups) Nonfat Greek Yogurt, 30 ml (2 tbsp) Unflavored Plant Milk, Splash of Vanilla Extract, 15 ml (1 tbsp) Sugar Free Syrup
  • Then add in the dry and incorporate until a thick smooth batter has formed.
    30 g (0.25 cups) All Purpose Flour, 15 g (2 tbsp) Unflavored Protein Powder, Pinch of Salt, 1/2 tsp Cinnamon, 1/2 tsp (1 tbsp) Baking Powder
  • Spray a medium pan with coconut oil and add a dollop of your batter. I did it in 2-3 batches or if your pan is large enough, you can pour it all out and spread into a large flat circle.
    Coconut Oil
  • Once it slightly starts to cook, get in there with your spatula and break it up. Scramble it as you would eggs. Let it sit and cook until all the edges crispy up. Repeat until all the batter is done.

Stuffings:

  • Serve with your favorite toppings! I did peaches, syrup, powdered sugar, and sliced almonds.
    90 g (0.5 cups) Yellow Peach, 5 g (2.5 tsp) Powdered Sugar, 15 g (1 tbsp) Sugar Free Syrup, 5 g (1.5 tsp) Sliced Almonds
