Tortilla Breakfast Egg Wrap
Ingredients
Eggs:
- Olive Oil Spray
- 2 Brown Eggs (Vital Farms)
- 92 g Egg Whites (H-E-B)
- Salt & Pepper
- Onion (chopped)
- Jalapeño (chopped)
- Cherry Tomatoes (halved)
- Small handful of Cilantro (chopped)
Wrap:
- 1 Low Carb Spinach Tortilla (Mission)
- 8 g Reduced Fat Mexican Shredded Cheese (Weight Watchers)
- 20 g Sliced Avocado (sliced)
To Top:
- Microgreens
- Hot Sauce (Tapatio)
Instructions
Eggs:
- Prep your veggies.Onion, Jalapeño, Cherry Tomatoes, Small handful of Cilantro
- In a large bowl, crack in your two eggs and add in the egg whites.2 Brown Eggs, 92 g (6 tbsp) Egg Whites
- Then your salt & pepper and chopped veggies. Mix well.Salt & Pepper
- Add to a skillet (big enough for your tortilla) with a few sprays of oil. Cover and let the top cook for about 3-4 mins.Olive Oil Spray
Wrap:
- Add in the tortilla on top. It should evenly cover it.1 Low Carb Spinach Tortilla
- Let it cook for about a minute before flipping it over.
- Top one half with your cheese and sliced avocado.8 g (0.5 tbsp) Reduced Fat Mexican Shredded Cheese, 20 g (1.5 tbsp) Sliced Avocado
- Fold it in halve and add to a plate.
