Ingredients

Sweet Potato:

  • 200 g Sweet Potato
  • 6 second Olive Oil Spray
  • Salt & Pepper

Toppings:

  • 60 g Garlic Lovers Pasta Sauce (Central Market)
  • 42 g Italian Sausage-Less Sausage (chopped (Trader Joeโ€™s))
  • 2 tbsp Red Onion (chopped)
  • 56 g Fat Free Mozzarella (H-E-B)
  • 8 g Italian Bomba Hot Pepper Sauce (Trader Joeโ€™s)
  • 5 g Baby Spinach (sliced)
  • Crushed Red Pepper

Instructions

Sweet Potato:

  • Wash and dry your sweet potato. I try to choose a potato thatโ€™s a bit fat so you get larger slices.
    200 g (7 oz) Sweet Potato
  • Then carefully cut into roughly 1/2โ€ discs until you have about 5-7 slices.
  • Add to a baking sheet and spray both sides with olive oil and season with salt & pepper.
    6 second Olive Oil Spray, Salt & Pepper
  • Air roast at 400ยฐ for 10-12 minutes, flipped halfway. Continuously monitor as cook times vary for everyone.

Toppings:

  • Remove from air fryer and add in dollops of sauce to each top. Then add in the sausage, onion and cheese. Try to stack everything as much as you can. I wasnโ€™t able to add in all the cheese without it falling off so I did about 2/3rds of it.
    60 g (0.25 cups) Garlic Lovers Pasta Sauce, 42 g (0.5) Italian Sausage-Less Sausage, 2 tbsp Red Onion, 56 g (0.5 cups) Fat Free Mozzarella
  • Bake at 350ยฐ for 6 minutes. I added in the remaining 1/3rd of cheese after the initial had melted a little.
  • Remove and carefully add your mini pizzas to your serving dish. Top with the remaining ingredients and dig in!
    8 g (2 tsp) Italian Bomba Hot Pepper Sauce, 5 g (5 leaves) Baby Spinach, Crushed Red Pepper
