Key Ingredients for these Sweet Potato Pizza Bites
To bring these sweet potato pizza bites to life, all you need is a handful of flavorful, nourishing ingredients. Each one plays a role in building the perfect bite—balanced, bold, and packed with protein.
- Sweet Potato: The foundation of this recipe. Look for a plump, round sweet potato that gives you sturdy slices. Once roasted, they become naturally sweet and slightly crisp around the edges—like built-in mini pizza crusts.
- Olive Oil Spray: Just a light coating helps get those golden roasted edges while keeping things light and healthy.
- Salt & Pepper: Simple, but essential. These two balance the sweetness of the potato and enhance all the toppings.
- Garlic Lovers Pasta Sauce: Adds a savory, garlicky kick that pairs beautifully with the sweet potato base. It’s bold, flavorful, and brings that familiar pizza sauce flavor we all crave.
- Italian Sausage-Less Sausage: This plant-based protein is savory and satisfying, making every bite feel like a classic sausage pizza—without the meat.
- Red Onion: Adds sharpness and a little crunch that complements the rich toppings and sweet potato perfectly.
- Fat-Free Mozzarella: Melts into a gooey, cheesy layer that ties the whole thing together—because no mini sweet potato pizza is complete without cheese.
- Italian Bomba Hot Pepper Sauce: A spoonful of this takes the flavor to the next level with heat, tang, and depth.
- Baby Spinach: Adds a pop of green and freshness to balance out all the rich, warm flavors.
- Crushed Red Pepper: For those who like a little extra heat, this finishing touch brings a fiery kick.
Substitution Options
Whether you’re working with what’s already in your fridge or just love mixing things up, there’s plenty of room to personalize these sweet potato mini pizzas. Here are some ideas to keep things flexible and fun.
- Sweet Potato: You could swap in roasted rounds of butternut squash or even thick-cut zucchini for a lower-carb option, though the flavor and texture will vary.
- Garlic Lovers Pasta Sauce: Any pasta or pizza sauce works here! Try basil marinara, arrabbiata, or even pesto for a new twist.
- Italian Sausage-Less Sausage: Use any plant-based meat crumbles or slices. Chickpea-based sausages, tempeh bacon, or lentil patties all make great swaps.
- Red Onion: Thinly sliced shallots or green onions also work well and can mellow slightly as they bake.
- Fat-Free Mozzarella: Sub in your favorite cheese dairy or dairy-free. Regular mozzarella, cheddar, or even vegan shreds will still melt beautifully.
- Italian Bomba Sauce: If you don’t have this, try chili crisp, sriracha, or red pepper pesto for a similar spicy, umami-rich flavor.
You can keep things classic or get creative—either way, your mini sweet potato pizza bites will turn out delicious.
**If there is a sub I haven’t mentioned above, it’s because I have not tested it and can’t speak for how well it would work for this recipe.
Equipment and Tools
No need to dig out fancy gadgets—this recipe keeps it simple with tools you likely already have. Just a few essentials and you’re ready to whip up these sweet potato pizza bites in no time.
- Air Fryer: Helps get those sweet potato slices perfectly tender with lightly crisped edges, all while saving time.
- Oven or Toaster Oven: Essential for melting the cheese and finishing off your mini sweet potato pizzas to golden perfection.
- Sharp Knife: To slice through the sweet potato safely and evenly.
- Cutting Board: For prepping your sweet potato and toppings with ease.
- Baking Sheet: You’ll need one to roast and bake everything together. If you’re using a toaster oven, opt for a smaller sheet.
- Measuring Scale: To get precise ingredient amounts, especially if you’re tracking macros or meal portions.
- Tongs or Spatula: For flipping the sweet potato rounds and transferring them without breaking.
With just a handful of tools and a little prep time, you’ll be diving into melty, crispy, protein-packed sweet potato pizza bites before you know it.
How to Make Your Sweet Potato Pizza Bites
These sweet potato pizza bites are simple, satisfying, and honestly just plain fun to put together. You’ll roast, top, and bake—and in under 30 minutes, you’ll have your own cozy tray of pizza magic.

Roast the Sweet Potato
Start by washing and drying your sweet potato, then slice it into thick ½” rounds—look for a slightly rounder potato so you get more surface area per slice.
Place the rounds on a baking sheet, spray both sides with olive oil, and season with salt and pepper.
Air roast at 400°F for 10–12 minutes, flipping halfway through. Keep an eye on them—everyone’s air fryer cooks a little differently!
Add the Toppings
Once your slices are fork-tender and slightly golden, remove from the air fryer. Spoon a small amount of garlic pasta sauce onto each one.
Then top with chopped sausage, red onion, and about two-thirds of the mozzarella. Stack everything neatly so it doesn’t spill over.
Bake to Finish
Transfer to the oven and bake at 350°F for about 6 minutes. Once the initial cheese is melted, add the remaining mozzarella on top for extra gooeyness and bake for a few more minutes until bubbly.
Serve and Top
Remove your sweet potato pizza bites from the oven and carefully plate them. Finish with a handful of sliced spinach, a drizzle of Bomba sauce, and a sprinkle of crushed red pepper if you like a little spice.

These easy sweet potato recipes don’t just taste amazing—they look great and feel fun to eat. Ideal when you want comfort food without the hassle.
Tips and Tricks
Here are some valuable tips and tricks to make your prep for these sweet potato pizza bites even easier and more successful. A little planning and a few small tweaks can really enhance both the flavor and texture of these protein-packed bites.
- Choose a Wide Sweet Potato: Look for one that’s thicker in the middle so your slices have a nice surface area. It makes topping much easier and keeps everything from sliding off.
- Don’t Skip the Oil Spray: A quick spritz on both sides helps your sweet potato mini pizzas roast evenly and get that lightly crisped edge we all love.
- Air Fryer Monitoring: Keep a close eye on your sweet potato rounds while air roasting. Cook times can vary depending on the size and thickness of your slices and your air fryer model.
- Layer Strategically: Start with sauce, then the sausage and onion, and finally the cheese. If you try to pile it all on at once, things might slide off or cook unevenly.
- Double Up on Sauce: If you like things saucy, don’t be afraid to add a little more marinara after baking—especially if your sweet potato soaks some of it up during roasting.
- Optional Spice Kick: The crushed red pepper and Italian Bomba sauce add great heat, but feel free to leave them off or adjust to your spice tolerance.
With these tips, your easy sweet potato recipes are sure to come out flavorful, balanced, and totally crave-worthy.
Storage Instructions
Here are some storage instructions to help keep your sweet potato pizza bites fresh and delicious if you have a few leftovers.
- Refrigeration: Store any remaining sweet potato mini pizzas in an airtight container in the fridge within two hours of cooking. Try to eat them within 1–2 days for the best texture.
- Best Enjoyed Fresh: These bites are definitely best straight from the oven, but if you do reheat, use an air fryer or oven to help re-crisp the sweet potato base.
- Avoid Freezing: Because of the toppings and moisture levels, freezing isn’t ideal. The texture of both the sweet potato and cheese can become grainy or soggy.
- Reheat Carefully: When reheating, pop them in a 350°F oven or toaster oven for about 5–7 minutes until the cheese melts and everything is heated through.
While they aren’t designed for long-term storage, these mini sweet potato pizza bites can still be enjoyed the next day with a little reheating love.

FAQs
Have a few questions about these sweet potato pizza bites? Here are some helpful answers to make the cooking process even smoother. From slicing tips to reheating options, we’ve got you covered.
-
Can I use regular potatoes instead of sweet potatoes?
You can! Yukon gold or russet potatoes will work in a pinch, but keep in mind the flavor will be more neutral and you’ll lose the subtle sweetness that complements the toppings so well.
-
How do I keep the toppings from falling off the sweet potato rounds?
Start with a small layer of sauce, press your toppings down gently, and stack thoughtfully. You can also bake in two stages—adding more cheese once the first layer melts to help everything stick better.
-
Is this recipe vegan-friendly?
Yes! Just make sure to use a plant-based mozzarella (or your favorite vegan cheese) in place of fat-free mozzarella. The sausage is already plant-based, so no extra swaps are needed.
-
Can I bake the sweet potatoes instead of air frying them?
Absolutely. Just roast them in the oven at 400°F for 15–20 minutes, flipping halfway through. They may take slightly longer but will still come out tender and golden.
