Shredded Tofu Tacos with Mango Salsa
Ingredients
Mango Salsa:
- 33 g Mango (cubed)
- 33 g Chopped Tomatoes (cubed)
- 17 g Red Onion (diced)
- 17 g Jalapeño (diced)
- 2 tbsp Cilantro (chopped)
- ½ Lime (juiced)
- Salt (to taste)
Tofu:
- 170 g Firm High Protein Tofu (Hodo Foods)
- 30 ml Low Sodium Soy Sauce (Kikkoman)
- 5 g Spicy Taco Seasoning (Siete Foods)
- Olive Oil Spray
Tacos:
- 2 Thin Corn Tortillas (Mi Rancho)
- Cilantro (chopped)
- Lime Juice
Instructions
Mango Salsa:
- Wash and prep all your veggies. Add them all to a bowl and mix. Let it sit so the flavors can all marinate together.33 g (0.25 cups) Mango, 33 g (0.25 cups) Chopped Tomatoes, 17 g (2 tbsp) Red Onion, 17 g (2 tbsp) Jalapeño, 2 tbsp Cilantro
- Add lime juice and salt to taste. Mix it a few time and adjust as needed.1/2 Lime, Salt
- I made this salsa x3 and used it for other recipes but these portions are what I used for one serving.
Tofu:
- Grab a grater and grate your tofu into a bowl.170 g (6 oz) Firm High Protein Tofu
- Season with soy sauce and taco seasoning. Give it a good mix.30 ml (2 tbsp) Low Sodium Soy Sauce, 5 g (2 tsp) Spicy Taco Seasoning
- Heat up a pan on medium heat with olive oil. Add your shredded tofu and cook for 8-10 minutes until it starts to firm up and turn golden brown.Olive Oil Spray

- Meanwhile, heat up your corn tortillas slightly in a pan. Don’t let them sit for too long so only cook these once your tofu is close to being done.2 Thin Corn Tortillas
