Scrambled Egg Sweet Potato Toast
Ingredients
Sweet Potato Toast:
- 200 g Sweet Potato Slices (~1/2 inch thick)
- 4 g Olive Oil Spray
- Salt & Pepper (to taste)
Scrambled Egg:
- 100 g Large Brown Egg (Vital Farms)
- 46 g Liquid Egg Whites
- Salt & Pepper (to taste)
- 2 g Olive Oil Spray
- 28 g Beef-Less Ground Beef (Trader Joe’s)
- 20 g Spinach (chopped)
Toppings:
- 28 g Fat Free Feta (Cafe Olympia)
- Crushed Red Pepper
- Everything But The Bagel Seasoning
Instructions
Sweet Potato Toast:
- Wash your sweet potato well. Then carefully cut off the ends of your and slice 3 ~1/2 inch slices.200 g (7 oz) Sweet Potato Slices
- Lay in your baking dish and spray evenly with oil. Season with a good amount of salt & pepper. Flip them over and repeat.4 g (1 tsp) Olive Oil Spray, Salt & Pepper
- Air fry at 400° for 20 minutes, flipping halfway. They should be fork tender.
Scrambled Egg:
- In a bowl whisk together your eggs and egg whites. Add a touch of salt & pepper to season.100 g (2) Large Brown Egg, 46 g (3 tbsp) Liquid Egg Whites, Salt & Pepper
- In a medium pan, spray oil and heat on low to medium. Add your crumbles and spinach and sauté until spinach has softened.2 g (0.5 tsp) Olive Oil Spray, 28 g (2 tbsp) Beef-Less Ground Beef, 20 g (0.66 cups) Spinach
- Pour in your eggs and let it evenly spread out over the crumbles and spinach.
- Once it starts to solidify a little, gently push in all the edges towards to center. Cover with a lid and let it all set. Shouldn’t take more than 2 minutes.
- Set aside and cut into three pieces for your toasts.
Toppings:
