PB&J Stuffed French Toast
Ingredients
Peanut Butter Filling:
- 8 g Powdered Peanut Butter (PB2)
- 6 g Creamy Peanut Butter (Creamy Richards)
- 28 g Nonfat Greek Yogurt (Siggi’s)
- 1.5 tbsp Water
French Toast Mixture:
- 1 Large Brown Egg (Vital Farms)
- 60 ml Flaxmilk + Protein (Good Karma)
- 1 tsp Vanilla Extract
- Pinch of Cinnamon
Assembly:
- 3 High Protein Bread (Oroweat Seeded Keto)
- 25 g Reduced Sugar Strawberry Jelly
- Olive Oil Spray
- 15 ml Sugar Free Syrup (Ms. Butterworths)
Instructions
Peanut Butter Filling:
- In a small bowl, mix together your ingredients for the peanut butter filling until nice and smooth.8 g (1 tbsp) Powdered Peanut Butter, 6 g (0.5 tbsp) Creamy Peanut Butter, 28 g (2 tbsp) Nonfat Greek Yogurt, 1.5 tbsp Water
- Grab your bread slices and spread the PB filling on one side and your strawberry jam on other.3 High Protein Bread, 25 g (1.25 tbsp) Reduced Sugar Strawberry Jelly
- I made 1.5 sandwiches. So 1 full one and then split the 3rd slice of bread in half and made a sandwich with that.
- Combine the two halves to make a sandwich so it’s ready for coating.
French Toast Mixture:
- In a flat dish, mix together your ingredients for the French toast mixture.1 Large Brown Egg, 60 ml (0.25 cups) Flaxmilk + Protein, 1 tsp Vanilla Extract, Pinch of Cinnamon
- Then dip your sandwiches and coat it front to back. Don’t let it sit for too long otherwise it will get soggy!
- In a pan, add in your olive oil spray and cook the sandwiches well until brown on all sides.Olive Oil Spray
