Ingredients

Peanut Butter Filling:

  • 8 g Powdered Peanut Butter (PB2)
  • 6 g Creamy Peanut Butter (Creamy Richards)
  • 28 g Nonfat Greek Yogurt (Siggiโ€™s)
  • 1.5 tbsp Water

French Toast Mixture:

  • 1 Large Brown Egg (Vital Farms)
  • 60 ml Flaxmilk + Protein (Good Karma)
  • 1 tsp Vanilla Extract
  • Pinch of Cinnamon

Assembly:

  • 3 High Protein Bread (Oroweat Seeded Keto)
  • 25 g Reduced Sugar Strawberry Jelly
  • Olive Oil Spray
  • 15 ml Sugar Free Syrup (Ms. Butterworths)

Instructions

Peanut Butter Filling:

  • In a small bowl, mix together your ingredients for the peanut butter filling until nice and smooth.
    8 g (1 tbsp) Powdered Peanut Butter, 6 g (0.5 tbsp) Creamy Peanut Butter, 28 g (2 tbsp) Nonfat Greek Yogurt, 1.5 tbsp Water
  • Grab your bread slices and spread the PB filling on one side and your strawberry jam on other.
    3 High Protein Bread, 25 g (1.25 tbsp) Reduced Sugar Strawberry Jelly
  • I made 1.5 sandwiches. So 1 full one and then split the 3rd slice of bread in half and made a sandwich with that.
  • Combine the two halves to make a sandwich so itโ€™s ready for coating.

French Toast Mixture:

  • In a flat dish, mix together your ingredients for the French toast mixture.
    1 Large Brown Egg, 60 ml (0.25 cups) Flaxmilk + Protein, 1 tsp Vanilla Extract, Pinch of Cinnamon
  • Then dip your sandwiches and coat it front to back. Donโ€™t let it sit for too long otherwise it will get soggy!
  • In a pan, add in your olive oil spray and cook the sandwiches well until brown on all sides.
    Olive Oil Spray
  • Cut in half and pour on some sugar free syrup. Enjoy!
    15 ml (1 tbsp) Sugar Free Syrup
