Ingredients
- ½ tsp Olive Oil
- ¼ cup Red Onion (chopped)
- ½ Jalapeño (chopped)
- 2 tsp Garlic (minced)
- Salt & Pepper
- 1 tsp Chili Powder
- 1 tsp Smoked Paprika
- ½ tsp Cumin
- Pinch of Cayenne
- 121 g Diced Tomatoes + Green Chiles (Red Bold)
- 124 g Tomato Sauce (Hunts)
- 30 g Baby Spinach (roughly chopped)
- 46 g Egg Whites
- 96 g Large Brown Egg (Vital Farms)
Serve:
- 28 g Fat Free Feta (Cafe Olympia)
- Cilantro (chopped)
- Crushed Red Pepper
- 66 g Sprouted Grain Bread, toasted (Food For Life)
Instructions
- In a small single-serve pan, add your oil and heat on medium heat. Add in your chopped veggies and minced garlic.1/2 tsp Olive Oil, 1/4 cup Red Onion, 1/2 Jalapeño, 2 tsp Garlic
- Sauté for 5-6 minutes until onions have softened. Season with all your spices and mix again for another 2-3 minutes.Salt & Pepper, 1 tsp Chili Powder, 1 tsp Smoked Paprika, 1/2 tsp Cumin, Pinch of Cayenne
- Pour in your can of tomatoes and tomato sauce. Add in your roughly chopped spinach and let it wilt down. Once it has, create a whole in the center and pour in your egg whites.
