This no bake pistachio tiramisu is a decadent yet healthy treat, combining a creamy pistachio filling with coffee-soaked rice cakes for a lower calorie, high-protein indulgence. The velvety pistachio cream, made with a mix of pistachio jello, pistachio spread, nonfat Greek yogurt, and plant-based milk, perfectly complements the layers of cold brew-soaked rice cakes. Finished with a sprinkle of chopped pistachios, itโ€™s a dessert thatโ€™s as easy to make as it is delicious.

Ingredients

Pistachio Cream:

  • 170 g Plain Nonfat Greek Yogurt (Siggiโ€™s)
  • 240 ml Plant Protein Milk (Good Karma)
  • 28 g Unflavored Protein Powder (Quest)
  • 14 g Pistachio Instant Pudding Mix (Jello)
  • 14 g Sweet Pistachio Spread (Fine & Raw)

Tiramisu:

  • 9 Thin Square Rice Cakes (Lundberg)
  • 50 ml Cold Brew (Chameleon)

To Top:

  • 14 g Sweet Pistachio Spread (Fine & Raw)
  • 21 g Roasted & Salted Pistachios (chopped (Wonderful))

Instructions

Pistachio Cream:

  • In a large mixing bowl, add in your yogurt, milk, and protein powder. Using a whisk or hand mixture to smooth it out.
    170 g (0.75 cups) Plain Nonfat Greek Yogurt, 240 ml (1 cups) Plant Protein Milk, 28 g (0.33 cups) Unflavored Protein Powder
  • Then add in your jello mix and pistachio spread. Whisk again until smooth. Set aside.
    14 g (1 tbsp) Pistachio Instant Pudding Mix, 14 g (1 tbsp) Sweet Pistachio Spread

Tiramisu:

  • In a wide and shallow bowl, add in your cold brew.
    50 ml (0.25 cups) Cold Brew
  • Then soak each rice cake in the cold brew and add to your dessert dish. I used an 8โ€x6โ€ rectangle glass dish which fit 2 rice cakes perfectly and 1 cut in half (see reference video).
    9 Thin Square Rice Cakes
  • After 1 layer of rice cakes, add in a couple scoops of your pistachio cream and evenly spread. Repeat twice with another layer of rice cakes and cream until all is finished.
  • Refrigerate for at least 2 hours to let everything set.

To Top:

  • Once ready, drizzle on your pistachio spread and you can make a cool pattern if you desire.
    14 g (1 tbsp) Sweet Pistachio Spread
  • Then chop your pistachios and sprinkle the edges of the dish.
    21 g (3 tbsp) Roasted & Salted Pistachios
  • Cut into fours and enjoy! Keep refrigerated and eat nice and cold.
