Ingredients

  • 4 Large Pasture Raised Eggs (Vital Farms)
  • 30 g Nonfat Greek Yogurt (Siggiโ€™s)
  • 30 g Low Fat Cottage Cheese (Good Culture)
  • ยฝ Lime
  • 40 g Roasted Corn
  • ยผ small Red Onion (cubed)
  • ยฝ small Jalapeรฑo (cubed)
  • Small Handful Cilantro (chopped)
  • ยฝ tbsp Tajin
  • Optional: Sprinkle of Elote Seasoning
  • 28 g Fat Free Feta (Athenos)

Instructions

  • Boil your eggs for 10 mins. Transfer to ice bath and then carefully peel. Slice each in half.
    4 Large Pasture Raised Eggs
  • In a blender, add in your yogurt, cottage cheese, and lime juice. Then scoop out the yolk of all the eggs. Blend until smooth and creamy.
    30 g (2 tbsp) Nonfat Greek Yogurt, 30 g (2 tbsp) Low Fat Cottage Cheese, 1/2 Lime
  • Roast your corn (I bought already roasted) and then in a bowl, add with the remaining ingredients. Add in the egg mixture and mix till creamy.
    40 g (0.25 cups) Roasted Corn, 1/4 small Red Onion, 1/2 small Jalapeรฑo, Small Handful Cilantro, 1/2 tbsp Tajin, Optional: Sprinkle of Elote Seasoning, 28 g (2 tbsp) Fat Free Feta
  • Take each egg half and dip the top into a plate with tajin. Then either scoop or pipe in your egg mixture into each egg. There may be leftover which you can just enjoy as is on the side! Top with leftover onion, cilantro, and feta for decor.
