Wet:

  • In a large mixing bowl, add your wet ingredients and whisk until smooth.
    226 g (1 cups) Unsweetened Applesauce, 28 g (2 tbsp) Unsalted Butter, 75 g (0.33 cups) 0% Milkfat Yogurt, 30 ml (2 tbsp) Nonfat Milk, 52 g (1) Large Brown Egg, 1 tbsp Lemon Juice

Dry:

  • Add in the dry right on top and gently start to fold together to create a thick and rich batter.
    90 g (0.75 cups) All-Purpose Flour, 45 g (0.33 cups) Vital Wheat Gluten or equal parts AP Flour, 31 g (0.25 cups) Vanilla Protein Powder, Pinch of Salt, 1 tsp Baking Powder, 6 g (1 tbsp) Poppy Seeds

Assemble:

  • Preheat oven to 350ยฐ.
  • Grab a muffin tray and line them with parchment paper liners. I recommend the tall ones as these muffins are on the taller side so you donโ€™t want it to overflow. Otherwise, I recommend portioning out into 8-10 muffins instead.
  • Scoop out your batter and add even amounts to each. If you want to be particular like me, I weighed out my total batter and divided by 6 and then added that to each muffin. Mine were roughly 100g each in weight.
  • Even out the tops with a spatula if it got messy and then bake at 350ยฐ for 25-30 minutes. Use a toothpick to ensure the center is cooked through.
  • Let them cool for a good 15-20 minutes before glazing.

Lemon Glaze:

  • Add your powder sugar, lemon juice, and vanilla extract to a small mixing bowl. Itโ€™s better to add less lemon juice than too much so start off low and add more as needed to achieve desired consistency.
    30 g (0.25 cups) Powdered Monkfruit, 2 tsp Lemon Juice, 1/2 tsp Vanilla Extract
  • Add a dollop of glaze to the tops of each muffin and sprinkle on some lemon zest.
